On the BochaSweet, the caption is incorrect. It says 21g, but it's actually 16g (which is what I say in the video). Also, when I used collagen powder, perhaps I should have been more specific and stated collagen PEPTIDE powder. You don't need to use the Perfect Keto brand (that's just what I had on hand). The Vital Proteins brand is quite a bit less expensive and works just as well.
I know you said you were going to do a video on thickeners. I just wanted to say that I hope you are testing “Konjac flour” aka “glucomannan powder” that stuff works wonders and for such a small amount.

I used the P.K. chocolate collagen powder :-) I also couldnʻt wait for Boca Sweet which I ordered on Amazon, because there were none in our local stores so I used the Swerve granulated sugar. My question though is as I was rewriting this recipe in my totally favorite recipe files (yes, old school 3X5 card) I realized that I was supposed to have added oat fiber! I thought it said oat flour. It was totally delicious though, Iʻm just wondering how it affects the carbs? Again, mahalo for all you do! Donʻt suppose you have a KETO lasagna recipe....couldnʻt find one from you on google search.

My batter came out A LOT thicker than yours. I had to add twice the amount of almond milk to thin it out and I still don't think it was as thin as your batter. I think I could have thrown some blueberries in it, spooned it into muffin tins and had some GREAT blueberry muffins. LOL. Not sure what I did wrong - could be a brand thing. My husband can't work so we have a very limited budget and I can't afford to by the more expensive brands of Keto "staples." I made the pancakes both ways, with the thick batter and the thinned-out batter. The thick batter pancakes were definitely the better of the two but the thinned-out batter was still better than the Birch Benders. In any event, thank you for all the work you put into making these types of videos. This is one of my new favorite keto channels!
M M I got a good rise out of the thick batter. When I thinned the batter out, not so much. If you let the batter sit too long the baking powder looses its oomph.

I made up several quart size bags of the dry ingredients and put the list of wet ingredients on the labels and stored them in the fridge so we can have pancakes quickly whenever the mood strikes. Then it occurred to me that this mix might make a good fruit cobbler. And it does! To make the cobbler melt one stick of butter in a 9x13 pan in a 350 oven. Add 4 cups of sweetened (or not) berries to the butter. Make up the pancake batter according to directions but leave out the 2 tablespoons of oil and add 1/4 to 1/3 cup sweetener of your choice. Pour over the fruit and butter but do not stir. Bake at 350 for 30 - 40 minutes.
I like the fact you are doing some food science and experimentation. Really helps folks understand cooking methods and ingredients when it comes to keto. Lots of other channels just give recipes which are okay, but they are basically "I saw this and did this, and it works for me (but I don't know how to make it better)." Not knocking them for effort, but it is always better to learn and understand and build your recipes based on experimentation and knowledge, rather than taking potshots in the dark. It also means you discover some amazing recipes! So, in short, thanks for that! :D

Made them this morning. I swapped Greek yogurt for the sour cream and extra whey for the collagen (I only had chocolate). I also added fresh blueberries. These were delicious! My husband agreed and pronounced "This is a keeper!" Closest thing to non Keto pancakes we've had, hands down. To me, you are a combination of Bill Nye and Alton Brown in the keto world. Thank you for all you do for those of us who are in this low carb lifestyle for the long haul!

I made these pancakes this morning, and they were delicious! I followed the “exact” recipe. So light and fluffy, and very tasty. I had three small ones and froze the rest. I made this recipe and it's excellent! The first time I made it, I used a food scale. The second time, I didn't. There is a difference as the first version came out more fluffy and cake-like. I did weigh the ingredients in the second batch just to check and see if there was a notable difference in weight. I found that measuring, instead of weighing, resulted in a surplus of 14g. This could be why the second batch came out more dense as I'm sure the ratio of dry ingredients to wet had an impact. So lesson learned: weighing the ingredients makes a lighter, fluffier pancake. Other interesting substitutions: Half&Half worked fine in place of almond milk; Allulose tasted better than Monkfruit/Erythritol sweetener; 325° worked better on my electric griddle as it didn't scorch the pancakes. My family was so happy to have pancakes again! I had given up on finding a keto pancake everyone would eat. They absolutely loved this one! Thanks Aaron & Steve for doing this! 🥞🍽😋❤ (P.S. I bit the bullet and bought the guar gum on your link. I am so glad I did! It's definitely better than xantham gum for thickening sauces. I see why you recommend it. I was so grossed out by the goopy, sliminess of Xanthum gum that I was afraid to purchase another keto thickener. I decided to trust your judgment since I love so many of your recipes. I am very happy with the guar gum and highly recommend it. Now that I know I am having these pancakes on the regular, I am looking at the Bocha Sweet for my next purchase once I use up the Allulose. These pancakes were so awesome! Even my non-keto husband liked them. I loved the texture, they were thick and had a great mouth feel. I ate them as "breakfast for dinner" with butter and Choc Zero maple syrup, and I was in heaven. Thanks once again Steve for an amazing recipe. I will be making these frequently. I think I may make up a mix to have it easily on hand.
Thank you so much for this recipe collaboration!!!! I gave up things like pancakes when i went keto 1.5 years ago. But after watching your detailed video and reading thru the comments, i felt it was worth it to get the exact ingredients. I got a couple from bulk at my local health food store. A few others i had to order online. The results were......THE. BEST. KETO. PANCAKES.EVER. BRAVO!!!!!!!! I make up ziplock bags for the dry ingredients. I do 5 baggies at a time. I use a kitchen scale and weigh all dry ingredients, which i find simple and easy. I opt to use 1 teaspoon of baking soda in place of the coconut flour. Otherwise, i follow the recipe exactly. When i'm ready to make pancakes, I mix the wet and dry ingredients in my vitamix for 60 seconds. This adds so much air to them. I also bought a griddle (totally worth it!) for $30 at my grocery store. My pancakes are so fluffy, its amazing! I think the extra leavening from the baling soda plus being mixed in the mixer makes all the difference. I tried to whisk them in a bowl once and there's no comparison. I highly recommend mixing ingredients in a high speed mixer. I now make a double batch and store in the fridge. I have tried freezing them, that works too. My 12 year old nephew had my pancakes, this past week. He gave them a 4 out of 5. I thought that was high praise! Sometimes i make a pancake taco using scrambled eggs and sausage as the filler. It tastes soooo good. Other times i'll boil down some blueberries and put it on top of my pancakes. I've also tried adding pumpkin pie spice. Super yummy. You literally can't go wrong with these pancakes!!

I tried Birchbender’s pancakes yesterday for my first time. They looked great but the texture was a bit off putting and it could really use a little sweetener and vanilla. Birchbender’s tasted ok to me when I would first take a bite but it left me with kind of a bad aftertaste. Thanks again for your work making these awesome recipes and sharing! :)

I like how you scrape the bowls well. I hate when presenters don't do that! I realize it's done to facilitate saving time but I just cringe. Also, thanks for NOT slamming the oven door to push the rack back in. ATK does that with their obviously expensive ovens.

Fiber is a must in any diet regardless of keto. Critical for preventing colon cancer and lot evidence preventing prostate cancer. Fiber is insoluble and indigestible; it doesn't affect keto but fiber is important for preventing cancer.

I’m low income so it’s difficult for me to afford all these Keto ingredients but I’m happy when I can because these are a great addition to my breakfast for dinner menu. Steve, this looks like another winner from you! I'll have to get some guar gum and oat fiber to try them out. I've been making waffles because I haven't found a good keto/low-carb pancake recipe. Most of them are too thin. Not a fan of the Birch Benders mix (I tend not to use mixes or pre-packaged foods anyway). BTW, I LOVE that you work with some of your subscribers to come up with even more great recipes!
Dang, I never have a first pancake flip that looks that good! Looks like I‘m gonna have to get some guar gum. Xanthan seems to upset my stomach so it will be interesting to see how the guar gum is. I'm new to keto and I make almost the same recipe for my pancakes I use a tablespoon of ground flax seed. I guess that can substitute the oat fiber. I also use coconut oil instead of Avacado oil and Xhantam gum instead of guar gum. I also was satisfied with the my recipe for keto pancakes because it's tender, moist and cake like pancake. I'm excited to make this recipe and compare it to mine. Thanks for the tip on guar gum.

Oops! I forgot to mention that where gum and xanthan gum easily blend with oils rather than water. This is useful in making gravy. When adding either gum to dry ingredients you are correct in whisking it in thoroughly with the other dry ingredients! Did I mention that I love the way you cook ?
So can you make slurry with xanthan and/or guar gum in oil and then stir that into the liquid you want to thicken (similar to a cornstarch/water slurry)?

Steve, I have tried 6 other Pancake recipes and with the exception of one, they were not good. I just found your recipe and made them for breakfast today....some adjustments made as my Mrs. wanted pumpkin pancakes so I followed the recipe to the letter then added 1/4 cup of pumpkin and an additional 1/4 cup of almond milk and then cooked them for 4 1/2 mins per side. Wife said they were winners so these are now our go to pancakes. thanks
Finally got around to making these. Wow, I I was pleasantly surprised. I keep forgetting to order guar gum, so I used 1 tsp of xanthum gum. Thanks for all your hard work!
Glad you liked them. Aaron and I tried the recipe with xanthan gum and guar gum and found we liked the guar gum version better. Still, xanthan works fine.
Tried these this morning and they were really good. I didn’t have guar gum so replaced it with xantham gum. I would like to try it with the guar gum next time to see if they hold up a little better, but over all it’s a keeper, thanks so much for sharing the recipe.
Tried this recipe using scale and have to say it was like cookie dough. I tried another batch and sifted my dry ingredients and used measuring cups and found it uses less and used a blender and to mix with wet ingredients. I’m not sure which part to give credit to but the consistency was like Steve’s in video. My second issue is I’ve tried skillets and griddle to recommended temp but can’t find a cooking method to keep temp consistent. They turned out very brown not golden and I felt the inside was still slightly undercooked and didn’t fluff like I normally like my pancakes. I even tried my waffle maker. I’m not giving up because the flavor was good I just have to work on cooking method. Thank you
I am very late to this party. Steve, this is the best pancake recipe I’ve ever had, period. I even added some Lily’s chocolate chips and it came out absolutely yummy! This is my new go-to pancake recipe. 👍❤️
Maybe I shouldn't have watched this because I have 2 hours left in my 24 hour fast and now I want pancakes! I despise Birchbenders because it's so grainy and every so often (and you never know when it's gonna happen) if feels like you've bit into some sand. Ick. Just ordered my oat fiber, but I'm going to hold off on the guar gum - my cupboards just can't take one more thing!!! :-)
I agree on the Birch Benders. As for the guar gum, maybe after I do my kitchen science video on it, you'll be able to decide if it's something worth having or not.
Thank you for the recipe. Will try it this weekend. I am not a great fan of guar gum, though. I used it as a thickening agent for puddings and mayonnaise (it was before I became keto), and for some reason I could always feel its taste and sliminess in the final product. I have not tried it in backing , but from what I have read about it, it was mostly recommended for sauces and ice-creams, and xanthan gum was recommended for baking.
Oh yummy! I am looking forward to the thickener video, especially a gravy thickner to use instead of corn starch. I tried xanthan gum as I finally bought some. It didn't dissolve properly. I tried a mix of arrowroot and xanthan gum and I got the thickness but there were clumps of the flour mixture, again not disoliving. I'm used to using corn starch and mixing in cold water. Apparently it doesn't work for xanthan gum. Thanks for suggesting guar guar. I have no clue about it but will have to check it out. Arrowroot is good but it has more carbs than I would like, plus the amount I have to use is a lot. Aren't we lucky we have all these new flours to work with😁👍 thank you, Steve, the pancakes look delicious.
@deer xanthan should be mixed quickly with your wet ingredients using a machine of some sort. It binds to both fats and water very quickly, which is why it is such a good emulsifier. But use a machine. Your arms can't duplicate the speed. Keto 💓
Steve those are the picture perfect pancakes. I love dark colored pancakes! I have all the ingredients except the guar gum. I am looking forward to seeing your thickener series. Will sunflower lecithin be among those?
I hadn't planned on it. Isn't lecithin more of an emulsifier than a thickener? I realize that many thickeners are also emulsifiers, but not all emulsifiers are thickeners.

I am very happy with the guar gum and highly recommend it. Now that I know I am having these pancakes on the regular, I am looking at the Bocha Sweet for my next purchase once I use up the Allulose. I made these tonight, and 😳 OMG the best pancake recipe ever. Thank you for all your work on this recipe. Yes it takes a lot of ingredients, but they are worth it.
These pancakes were so awesome! Even my non-keto husband liked them. I loved the texture, they were thick and had a great mouth feel. I ate them as "breakfast for dinner" with butter and Choc Zero maple syrup, and I was in heaven. Thanks once again Steve for an amazing recipe. I will be making these frequently. I think I may make up a mix to have it easily on hand.

Thank you so much for this recipe collaboration!!!! I gave up things like pancakes when i went keto 1.5 years ago. But after watching your detailed video and reading thru the comments, i felt it was worth it to get the exact ingredients. I got a couple from bulk at my local health food store. A few others i had to order online.
The results were......THE. BEST. KETO. PANCAKES.EVER. BRAVO!!!!!!!!
I make up ziplock bags for the dry ingredients. I do 5 baggies at a time. I use a kitchen scale and weigh all dry ingredients, which i find simple and easy.
I opt to use 1 teaspoon of baking soda in place of the coconut flour. Otherwise, i follow the recipe exactly.
When i'm ready to make pancakes, I mix the wet and dry ingredients in my vitamix for 60 seconds. This adds so much air to them.
I also bought a griddle (totally worth it!) for $30 at my grocery store.
My pancakes are so fluffy, its amazing!
I think the extra leavening from the baling soda plus being mixed in the mixer makes all the difference. I tried to whisk them in a bowl once and there's no comparison. I highly recommend mixing ingredients in a high speed mixer.
I now make a double batch and store in the fridge. I have tried freezing them, that works too.
My 12 year old nephew had my pancakes, this past week. He gave them a 4 out of 5. I thought that was high praise!
Sometimes i make a pancake taco using scrambled eggs and sausage as the filler. It tastes soooo good. Other times i'll boil down some blueberries and put it on top of my pancakes. I've also tried adding pumpkin pie spice. Super yummy. You literally can't go wrong with these pancakes!!

I tried Birchbender’s pancakes yesterday for my first time. They looked great but the texture was a bit off putting and it could really use a little sweetener and vanilla. Birchbender’s tasted ok to me when I would first take a bite but it left me with kind of a bad aftertaste. Thanks again for your work making these awesome recipes and sharing! :)

Fiber is a must in any diet regardless of keto. Critical for preventing colon cancer and lot evidence preventing prostate cancer. Fiber is insoluble and indigestible; it doesn't affect keto but fiber is important for preventing cancer.

Steve, this looks like another winner from you! I'll have to get some guar gum and oat fiber to try them out. I've been making waffles because I haven't found a good keto/low-carb pancake recipe. Most of them are too thin. Not a fan of the Birch Benders mix (I tend not to use mixes or pre-packaged foods anyway). BTW, I LOVE that you work with some of your subscribers to come up with even more great recipes!

Dang, I never have a first pancake flip that looks that good! Looks like I‘m gonna have to get some guar gum. Xanthan seems to upset my stomach so it will be interesting to see how the guar gum is. This recipe looks so good! Thank to you and Aaron for plugging away until you got it where you wanted it! I do not care for the birch benders mixes at all so I can’t wait to try these.

I'm new to keto and I make almost the same recipe for my pancakes I use a tablespoon of ground flax seed. I guess that can substitute the oat fiber. I also use coconut oil instead of Avacado oil and Xhantam gum instead of guar gum. I also was satisfied with the my recipe for keto pancakes because it's tender, moist and cake like pancake. I'm excited to make this recipe and compare it to mine. Thanks for the tip on guar gum.

Oops! I forgot to mention that where gum and xanthan gum easily blend with oils rather than water. This is useful in making gravy. When adding either gum to dry ingredients you are correct in whisking it in thoroughly with the other dry ingredients! Did I mention that I love the way you cook ?
So can you make slurry with xanthan and/or guar gum in oil and then stir that into the liquid you want to thicken (similar to a cornstarch/water slurry)?

Guar gum is a godsend when it comes to gravy! Someone who eats low-carb can finally have gravy on their meat. And the base of it is just meat stock

We use arrow root and tapioca as our go-to thickeners. May not be that Keto, but they are more readily available to us in our area.

Steve, I have tried 6 other Pancake recipes and with the exception of one, they were not good. I just found your recipe and made them for breakfast today....some adjustments made as my Mrs. wanted pumpkin pancakes so I followed the recipe to the letter then added 1/4 cup of pumpkin and an additional 1/4 cup of almond milk and then cooked them for 4 1/2 mins per side. Wife said they were winners so these are now our go to pancakes.

Tried this recipe using scale and have to say it was like cookie dough. I tried another batch and sifted my dry ingredients and used measuring cups and found it uses less and used a blender and to mix with wet ingredients. I’m not sure which part to give credit to but the consistency was like Steve’s in video. My second issue is I’ve tried skillets and griddle to recommended temp but can’t find a cooking method to keep temp consistent. They turned out very brown not golden and I felt the inside was still slightly undercooked and didn’t fluff like I normally like my pancakes. I even tried my waffle maker. I’m not giving up because the flavor was good I just have to work on cooking method. Thank you

Maybe I shouldn't have watched this because I have 2 hours left in my 24 hour fast and now I want pancakes! I despise Birchbenders because it's so grainy and every so often (and you never know when it's gonna happen) if feels like you've bit into some sand. Ick. Just ordered my oat fiber, but I'm going to hold off on the guar gum - my cupboards just can't take one more thing!!! :-)

Thank you for the recipe. Will try it this weekend. I am not a great fan of guar gum, though. I used it as a thickening agent for puddings and mayonnaise (it was before I became keto), and for some reason I could always feel its taste and sliminess in the final product. I have not tried it in backing , but from what I have read about it, it was mostly recommended for sauces and ice-creams, and xanthan gum was recommended for baking.
How about agar agar?
I have some, but don't think I ever used it.

Oh yummy! I am looking forward to the thickener video, especially a gravy thickner to use instead of corn starch. I tried xanthan gum as I finally bought some. It didn't dissolve properly. I tried a mix of arrowroot and xanthan gum and I got the thickness but there were clumps of the flour mixture, again not disoliving. I'm used to using corn starch and mixing in cold water. Apparently it doesn't work for xanthan gum. Thanks for suggesting guar guar. I have no clue about it but will have to check it out. Arrowroot is good but it has more carbs than I would like, plus the amount I have to use is a lot. Aren't we lucky we have all these new flours to work with😁👍 thank you, Steve, the pancakes look delicious.
Arrowroot is very carby but keto folk look more kindly on it than corn starch since it doesn’t have corn.

xanthan should be mixed quickly with your wet ingredients using a machine of some sort. It binds to both fats and water very quickly, which is why it is such a good emulsifier. But use a machine. Your arms can't duplicate the speed.

Alternatively, whisk the xanthan gum in with your dry ingredients so that it doesn't clump (if using when baking).

I hadn't planned on it. Isn't lecithin more of an emulsifier than a thickener? I realize that many thickeners are also emulsifiers, but not all emulsifiers are thickeners.
