Do you think I could do this with grated onion? That way there aren't any big pieces of onion? I usually do that when I make regular non-canned meatballs.
Give it a go ! I love canned pork , only tip is pork loin is dry when canned ,,,, can roasts with some fat and it will be your favorite canned meat ,,,, ground beef I always brown first , better texture and flavor

If you like meatballs, and who doesn't, whether you can them or not you should invest in a 1 ounce ice cream scoop. Scoop the meat mix out fast, you can smooth in your hands if you like, they are all the same size, and cook evenly (not an issue with canning). I will definitely try this recipe. I made the Quebec Meatball recipe by Bernardin, but found the spices just a little different to my regular tortiere pie flavour, so am looking for something new. Thanks.
@@TheMillerLifeKitchen I hate to say it, but sometimes I get truly anal and get out my scale and weigh each one. I have even been known to cook each one suspended in a mini muffin tray so they don't get a flat bottom. Not quite sure why, since by the time you get them into tomato sauce or a gravy you can't tell anyway. I watched too my Alton Brown back in the day.
No they aren’t mushy at all , the combination of ground pork with the ground beef is really good ,,,,,, that is what takes them from not to really good , moist and really good flavor
