Note for your new bike. Buy (or let someone create for your frame) transparent foil, called -stone guard- that’s used for protecting cars from pebbles and some scratches also. Its very durable and flexible. I have 70% of that foil on my bike. I measured my frame, cut pieces and put them on the most exposed parts on the frame . 2years now and scratch free..highly recommend
I welcome to my Country, I'm sure you will love it. A good challenge for you is the segment Covilhã/Torre, a very nice HC climb. But obviously, plenty more great riding to do.
The best climb I did in the Pyrenees was Ax les Thermes to Port d'Envalira, 35km and 1700m gain, at the end of my 12 countries in 12 days challenge, winding up the mountains into Andorra past ski lifts, and weirdly a go kart track. The descent was epic, definitely one to revisit as a climb.

For yer tar spots, if they're still there try some glue and tar remover - will work a treat! Dab the GTR onto a microfiber and then gently wipe over the spots until all tar removed and then rinse off any residue with some warm soapy water
Fly down them descents. Id be in a wheelchair if i tried descending like that. Wish I had the skills and confidence to let the brakes go a little. Im crap at descending.
Nothing weird with ice-cream and coffee m8. It's a traditional Italian desert called Affogato or "Affogato al caffè"
