  • Matsutake mushrooms harvested in Japan can cost over $500 per kilogram. Mushroom foragers like Gihei Fujiwara search for matsutake once a year around early fall. But it's hard to predict the quality of a harvest. Over the past 70 years, Japan's harvest has declined by over 95%. Now the mushroom's future is unclear. So what makes these mushrooms so expensive? And why have they almost disappeared?

    I have picked them on the Oregon coast since 1988, many years ago I was picking by the road and 2 elderly Japanese women stopped and asked me to sell one to them, but that is illegal for me so I gave them all my bag, 3 lbs abt. I have never seen anyone smiling so much. They had driven from Seattle to Oregon just to get one. 😊

      @@thunderb00m the state regulations for harvest in Oregon require a license for any sales of a regulated forest product. The picked can only sell to a licensed buyer.

      @@It-s-me-P probably not, berries are not regulated as strictly, but Forest service requirements for harvesting on Federal lands must be considered. There's a lot of different things that are available for market value in the Oregon region, from mushrooms to ferns, and shrubs for floral arrangements to Pine cones. I was lucky to be in the early days of it all , before the legislation passed to regulate our access. 35 years ago, there wasn't the huge money involved in matsutake that is common now. It was considered a family activity for the most part. Now, the prices have made it more mercenary with professional pickers who destroy the mushroom beds ,which limits the return for the future.

    If he has been doing this for 60 years. It is sad that he doesn't have any one to pass on this tradition. Hard word but that's what keeps him healthy at his age. Thats why people in Japan have the longest life in the world. Keep up the good work.

      i think the western habit of ceasing all activity after retirement is killing us. I see a ton of people retiring at 65 and then more or less turning into vegetables afterwards, doing nothing but play games, watch tv, and lay around most of the day. I think it's actually unhealthy to stop working before 70 (assuming theres no health reason to stop you working) and we need to stay physically and mentally active after 70. Turning off your brain and watching TV all day or lounging around the house rather then going out or doing things that require some physical or mental work just causes your brain and body to degrade quickly, that's why a Japanese 80 year old seems like an American 50 year old

    Experience mushrooms picker like him make it look easy. This mushrooms grow randomly on mountain very rich in volcanic ash and requires certain pine trees near by. The mushrooms only grow once a year around September or November and in certain location that's why its rare and expensive. I used to pick them myself that's how i know.

    It's laborious within reason
    I still love collecting mushrooms, it's fun to be outside, especially since the weather has to be good enough, fresh air, beautiful view
    This world is hard compared to?
    I work with steel, ob an industrial scale, chemicals in the air, heavy lifting, 3 shifts, overtime on weekends and sometimes I'm on standby for the rest of the weekend
    I'm glad when I can go out into nature, instead of filtering industrial air with my lungs

      Those first of the year auctions are mainly for advertising, and the money goes to the association. A restaurant chain will bid 1m or more for the first tuna of the year and distribute to 20 or 30 locations. They charge the usual price (not like $500 a slice, haha 🤣).

    In the southern part of the US there is an endangered species of bird called the red cockaded woodpecker. This bird only exists because the natives used to the burn the lands to manage the deer. That area by natures choice would be an oak savannah, and not the pine grove they lived in. Now that it’s being managed for what it should have been, the birds are slowly disappearing while we also try to prevent their extinction, it’s a weird duplicity.
    This mushroom feels very much the same. It was only dense in those woods when they people were removing all the vegetation. Now that electricity keeps them warm, the woods are returning to a more natural state, one unseen for decades.

    I first heard the name Matsutake Mushroom when I was only in 5th grade Elementary School. Since then, I haven't heard of the Matsutake Mushroom Price dropping. In fact, prices are increasing every year, although sometimes they are stagnant. Hopefully in the future Mushrooms like this will maintain the beauty of their habitat and existence.

    Whilst working and living in Japan, I spoke with many young Japanese and they are not interested in looking for these mushrooms nor are able to tell them from any other mushroom. I would say the real decline is really the lower numbers of older Japanese looking for them and young Japanese like younger Europeans are not interested this sort of thing. Yes, i spoke with some younger Japanese maybe in their 40's who were out even with dogs looking for them.

      Well depends on which part of Europe are we talking about. Mushroom picking is sort of "national hobby" in Czech Republic. And its mostly young people that I see in forrests every autumn (myself included). :D

I've not yet picked any in the Czech Republic yet, although we have bought some books from there on mushrooms. For me it's almost as exciting as hunting LOL and in some cases better. BTW I have many videos of mushroom hunting on my channel.

      The mountains have owners generally in Japan, So if picked Matsutake (also beneficial mountain herbs)with out permissions of owner, there are cases in which get arrest.
      And I guess almost owners will not permission 😅

      @@micca5nz Yes I came across mountain streams many times in Japan which had walled structures and surrounded too by rusty barbed wire. My friend told me they were areas for growing high quality wasabi.

    After seeing this at my local Japanese grocery store for so long, I finally decided to try them. Made matsutake gohan and it was different. Very pungent and earthy but otherwise pleasant. Despite being steamed with rice, it retained some crunch.

    With all the knowledge and technology we currently have it's a shame that there's no way of replicating this type of environment and climate in an advanced greenhouse to grow these mushrooms easily without the pine trees. Not even an aeroponics system can work with this unfortunately.

      we have matsutake in mushroom farms in Canada. They cheap to make abt 130-280/kg. But the taste is diffent from the wild one I can tell. Same with the one from China or Korea

      it's because fungi are a different class altogether. although we can domesticate certain species like buttons and oyster mushrooms, we have to remember fungi behaves more like animals-- some will require diets and environments that are harder to mimic artificially.

      As per usual it's probably more a question of economics.
      As mushrooms need a certain environment, basically forest, that makes it challenging to create them, not impossible, but definitely more difficult, as it was also pointed at in this video, as they said that once, when they needed more firewood the forests made more of these mushrooms as people were taking care of the forest. You basically would need to do that again, but the problem is, how much does it cost? And the answer is a lot.

There are many species of plant, animal and funghi humans haven't been able to domesticate, due to them requiring specific conditions which may be hard or impossible to replicate outside of their natural environment.

    Theres plenty of these in northern Europe and Russia. And the quality for sure is not worse, the environment is very clean. Of course if one would transport these to Japan for better price they would not be so fresh anymore.

      There is plenty of Matsutake in Finland but like with any mushrooms you have to know where to look in the forest. The cost of mushrooms is mainly due to yearly changes. This mushroom is not that popular here so it's exported to Japan. Collecting mushrooms in the forest is really nice and meditative :)

    Me - like most of children in Finland were grown by the japanese anime of Moomins.
    Parents usually said that "once you've seen 3 episodes, your father will get back home from work"
    It was something truly magical. And everyone in Finland has seen atleast a few episodes. Most children - all of them.

      Matsutake has a very very strong aroma. I think it's much stronger than Natto, which is a Japanese fermented food with a unique taste. So maybe it takes time to get used to it.

    I remember when exporting matsutake to Japan was a thing in the news in Finland. Barely anyone picked them, so the price they sell out was a surprise. I don't know how much we now export to Japan, but it was a buzzing new thing back then.
    I don't mind that shroom, it's ok. Won't go to specially find it, because there's plenty anyway, and most likely I'll just leave them there.

    My guess is that the forests these mushrooms grow in are at increasing risk of having devastating wildfires, too, as there are less people doing this kind of job and living off of the land. The way he tends to the forest reminded me of Indigenous land management practices in Coast Redwood forests in California. The Indigenous people maintained healthy forests by cleaning up built-up debris, thinning out trees, using controlled burns, etc. Without people keeping up the health of the land, dead plant material and overgrowth of young trees etc. has built up to levels it hadn't been for at least 10,000 years prior to European colonization. This built up material then catches on fire and (exacerbated by drought and rising temps) becomes the massive uncontrollable wildfires that have been incinerating the West coast. If people like Gihei Fujiwara aren't trimming branches, preventing fallen leaves from building up, and everything else, then their forests are probably going to start burning. And I've worked in the burn scar left in aftermath of a wildfire- it's devastating to the ecosystem, it takes a looooong time for a forest like that to get back to how it was, if it ever does at all.

      The knowledge about forest fungus is scarce to put it mildly, but my guess is that if anything can survive wildfire it would be fungus with their underground mycelium which can spread across vast terrains (check out Armillaria ostoyae in Blue Mountains, Oregon for example - and this is just one example which was found, researches like this are not so common). Of course, they can be unable to produce mushrooms or grow without trees until the forest will revive itself again, but I believe they can survive years underground in such conditions or just use trees that weren't affected in completely different part of the forest (again, just a guess).

      @@proosee It matters because there's no way Japan will ever get wildfires like California and I don't think it's really the concern you two are making it out to be. For that to happen, Japan's wind currents would need to change. They'd need lower rainfall rates than they currently do. They would need to have a lower water table and start getting the same droughts CA does. They'd need entirely different trees and plants covering the ground which do a different job of retaining water. There is soooo many factors beyond dead plant material to start getting wildfires.

    What harvest method is he using? I was always taught to slice mushrooms at the base not tear them out of the mycelium. Watching him dutifully propagate spores and tend to the hillside is most admirable. I hope this feature draws more interest from future generations.

      Exactly. You were taught the right method. I suspect that if they harvest the mushrooms this way it is a possible (on of many most likely) cause why they are in decline. Of course it cant be blamed solely on this but it can be a big factor.

      Do not cut them! These are dug up carefully. If you are not commercial permit split in half length wise through the stem.

      You are mistaken, most mushrooms are better off pulled up rather than cut, morels included. Cut stems make the mycelium susceptible to diease.

      @@samaustin6255 Ahhh... Okay two informations. I am from the country where "mushroom hunting" is most popular in the whole world (Czech Republic). So trust me that I have quite a bit of knowledge when it comes to this. And second information is that when it comes to cutting stem X tearing the mushroom out according to science (which you told me to follow) cutting is actually better. For several reasons. And when you tear the mushroom out what remains? You damage that micelium and there are still "open wounds" just as susceptible to disease on top of it being damaged... So sorry but you are simply not right about this.
