YAY! A viola convertee! Yes, I do have a recommendation. For a beginner viola I would go with the Mendini series (it is very cheap and pretty good quality - I've tried 2 of their instruments - main thing is find someone who knows what they're doing setting it up). Once you get advanced, go with DZ Strad (my advanced viola + case +everything that comes with it was all only $700 and they sound fantastic).

Try not to get any bad habits from the start... they are super tough to fix. Also, the first month will be not so fun... but afterwards you will start to be able to play simple melodies and that will be exciting. At this point, go to Musescore.com and find viola music for all your favourite songs. Practice playing tons of stuff you like and videotape yourself. Watch the videos and analyse in order to improve. This was my method to learn :-)
Sure can! Honestly it depends a lot on neck length. I have a very long neck so the wolf shoulder rest worked well for me. However, the one I've liked best is the one that came with my viola.
Shaky in terms of tone? It all has to do with relaxing and letting the weight of your arm pull sound from the string. Make sure your elbow is only slightly below the level of your wrist. Make sure your shoulder is dropped. Make sure the whole weight of your arm is sinking into the bow. You don't need to apply pressure to get a very deep, rich sound. Does that help? It take a lot of practice. Also, try practicing with the back of your upper arm leaning against the wall so your bow is perpendicular to the string and you can't bow sideways - just up and down - only your wrist and elbow should move (eventually fingers too!).

I would first try just being conscious of it as much as possible and doing exercises that are really simple - e.g. just half notes, while only focusing on the thumb. And check your bow hold every time you pick it up. If that STILL doesn't work, I think there are plastic bow hold learning devices you can attach to your bow. That would probably do the trick in a week or two :-)
