Since being diagnosed with Diverticular Disease in October 22, I've struggled with eating certain vegetables. I've been trying my hand at dehydrating. I haven't done much because my machine isn't adjustable. But, doing veggies like this could really help me get more of them into my diet. Especially the powdered form. It might not hurt me. An idea or two - add a bit to stuffing, or even something like cornbread muffins. Add to sour cream to make a veggie dip (sort of a take-off of onion soup mix dip).
I was laid up for many weeks this winter and I used my dehydrated "left over" veggies in my big thermos pot with boiling water and some salt & pepper. I brought stuff to my bedside and had soup whenever I needed food. As I felt a little stronger I made things with pasta too.

I do meals-on-wheels type meals for my elderly dad. He's 81 and has trouble chewing some things with his dentures. I put some of this in pretty much all of his meals for extra vegetables.

I love dehydrated veggies for soups, rice and pasta dishes. My spaghetti sauce has pepper, onions, squash, zucchini, asparagus, carrots, spinach and whatever else I decide to toss in. You just can't go wrong with veggies!
Ive done cauliflower, broccoli, and kale, but thats all the veggies ive ever dehydrated. Gonna have to try this cause id love to get some added veggies in dishes. Especially cause my son hates veggies. This would be easy to mix in and he wouldnt even know haha.
You are a life saver! I think I could freeze some of that blend for those first uses you named, and dry the rest! My poor chickens will never have any scraps!

The #1 thing I love about my dehydrator is that I don't throw out rotten vegetables any more! If I can't use them to cook with I can always dehydrate them and use them later. I am slowly building a cupboard like yours with various dried stock to use. I just love knowing I can try a new recipe that uses jalapeños without running to the store to buy them because I have some dried in my cupboard! I can buy a bunch of peppers on sale and dehydrate them for use whenever I want. It's so great!
Haha, did you know we were all cleaning our refrigerators this weekend?! I totally get the "making plans", then whoops! Other priorities. Hope things are going better now. It's great to be able to take some of the stress out of life by salvaging what's still good and dehydrating it for later use. I thought I had more patience, but I've figured out that I prefer instant gratification when I rehydrate, lol. So I really appreciate the tips about doing some cooking or blanching first. Funny enough I cleaned out mine yesterday, some dubious looking cocktail sausages and pork pies 2 lots of very green looking cheese and a solid lump of mayonnaise. Yours looks a lot healthier 🤣
I agree with you regarding the silicone sheets. Everything sticks and it is difficult to get off. Thanks for the great tip for saving produce that may otherwise end up in the compost a few days later. I had not thought of doing this.
Darcy, the method you use for sticking on paper, it helped. Love the time you've spent teaching this ole gal. Sure hope you and yours stayed safe through the storm.
I like adding 2Tbs. To my hamburger when I’m making hamburgers , sloppy joes, hamb steak covered in gravy. I use the powder in my breading crumbs with my chicken breading. Adds great flavor and nutrition, of course soups, stews, roasts, baked chicken, with dry rubs too. The powder can be used on so much. I also have mushroom powder mixed in this too.
I sorta do this with the over abundance of greens in the spring/early summer - I grind it fine to use in gravies, soups/stews, etc. My kids always say "mom puts that sh.. in almost everything". Extra vitamins :)
I am going to try this in the summer when I have so much veg! I use powdered mushroom, tomatos, courgette all winter long! the whole of the summer I have my dehydrator running of months at a time lol

I have a round dehydrator I would have to cut the sheets differently. I have hardly used it. I was disappointed in the oranges I did. I also did a few other fruits and in the end, it was almost nothing there. The strawberries were like "where did they go"? ... But this looks like something I would really want to use. We love soups!
Wait till you dry melons 😁😁😁 Drying fruits seems to work for my allergies though. Can't have the fresh fruit without it being heated to 100°C, but after drying it, I can eat melons again! And lots of other fruit. Even though the remaining fruit are so small, they are delicious 😁

Have you ever tried sneaking a couple teaspoons of powder into mashed potatoes?
I appreciate this. I am on the edge of losing my job and I have been needing a strategy to have nutrition and have a lifetime history of wasting fresh vegetables and that has to stop. Can things like kale or spinach or other greens be added in? Do things dehydrate at the same rate?

I've learned so much from watching your lessons ,love making biscuits with a variety of my powders , love putting my dry carrot tops and kale to my sauces and fried eggs there's so much you can do with all the powders , I've invested in different mills and dehydraters and blenders, blown a few blender motors so Don't go cheap ,i purchased your book and i love it, just wanted to thank you

Seeing this list reminded me of the powdered stock /soup mixes I made once but also reminded me of 2 small bags of veg I'm wanting to use up soon for freezer space looks like itl be dehydrated then ground to a powder to be measured for the mixes :) thanks
I love doing that in fall,making many different spices for marinade.Also fit that green silicone tray ,when I making fruit drying on I rub with coconut oil or everything sticks ,ya .
I’ve done this for years, just froze it in snack sized bags as I don’t have a freeze dryer or dehydrator and can’t afford those machines. I added it to meatloaf, I put in a steam bag then added to mashed potatoes, I told the kids it was mashed potatoes with sprinkles. 😂 Yo can add it to so much.
I add my veggie powders to my meats when I roast and can them, or add to heated half pints of homemade bone broths for a cup of goodness, or cooking liquid for rice, pasta or potatoes.
I will be trying this, for me nutrient deficient picky other half 😆 Since I usually make meals for 3 or 4 portions, what amount of powder do you usually put per person? I can’t wait to be sneaky, lol

You can! However, don't discount having convenience real foods on your shelves, either. I COULD dehydrate beef, but I prefer to have the freeze dried done for me and shelf-stable, than dehydrating it myself.
@@ThePurposefulPantry Totally agree! I yearn to own a freeze dryer. In the meantime I am procuring freeze dried fruits and veg to see if the expense will pay off for me. I am gluten free/plant based/pescetarian I don't foresee ever wanting to freeze dry fish. Yuk. No way can I see reaching for that. Currently, I rely on Nutrient Survival for great freeze dried 15 year shelf foods and meals. Freeze dried holds on to so much more nutrients. Speaking of shelf stable, I have found the MOST incredible dairy product. It is hidden in plain sight, and we haven't even noticed. Aldi occasionally uses an outside brand when they don't have half and half to offer. In the cooler, right were the half and half and whipped cream. You will see a white rectangular box with blue font BYRNE Dairy. 6 month bbd currently. It is a quart and reasonably priced. (can't think what I paid). Cracks me up they have no idea they don't need to store it in the cooler. But grateful they are, once the secret gets out that will be snatched up. Shhhh. 🤫 don't tell TOO many people! 😉
I had that same issue with dehydrated vegs sticking to those green mats. I did put the mats in a pan with hot water and let them soak into the pan off the mats and strained that then used it in cooking.
Love this! I think this is such a great idea to help with reducing waste and perfect for adding to meals and making broth! Thanks for sharing! I just did garlic powder for the first time as I had so much from my harvest and now I do not have to buy any for a long time!

Well, composting is never wasteful as it is what feeds the plants that are feeding you!
Minus the onion peels this dried mixture would be great for rice, yum! Like a full veggie sofrito!
I have just created mushroom powder and veg powder using up items from my fridge 🙃 so happy. Less waste more nutrition

I made some vegetable soup from dehydrated carrots, corn, and celery , and other veggies I grew. Was so delicious

No - because my folks would not be okay with that lol .It doesn't completely disappear, so you'd see flecks in the potatoes. ((HUGS))

In this small size, mostly -but you can't over dry, so you just dry until it's dry.

It is a personal preference. My kiddo can taste it in his Mac n cheese if I use more than a tablespoon, so you will have to experiment.
Don't try to hide a full daya serving of veg into one dish. Smaller amounts in everything boost

Speaking of shelf stable, I have found the MOST incredible dairy product. It is hidden in plain sight, and we haven't even noticed. Aldi occasionally uses an outside brand when they don't have half and half to offer. In the cooler, right were the half and half and whipped cream. You will see a white rectangular box with blue font BYRNE Dairy. 6 month bbd currently. It is a quart and reasonably priced. (can't think what I paid). Cracks me up they have no idea they don't need to store it in the cooler. But grateful they are, once the secret gets out that will be snatched up. Shhhh. 🤫 don't tell TOO many people! 😉

I've been doing this for a few years now. I do carrots and greens separately though.
I had that same issue with dehydrated vegs sticking to those green mats. I did put the mats in a pan with hot water and let them soak into the pan off the mats and strained that then used it in cooking.
Love this! I think this is such a great idea to help with reducing waste and perfect for adding to meals and making broth! Thanks for sharing! I just did garlic powder for the first time as I had so much from my harvest and now I do not have to buy any for a long time!

Parchment/baking paper/grease-proof paper, yes. Wax paper is not recommended.
