- Prepare Chavalikai Palya or Gorikayi Palya Recipe in Udupi Brahmin style. Goes well with Rice and Chapathi. Narrated in Kannada with English subtitles.
For Palya Masala or Kai Sasive Ingredients:
Grated Coconut - 1/2 Cup
Red Chillies - 2 or 3
Cumin Seeds / Jeera - 1/2 tsp
Mustard Seeds - 1/2 tsp
Other Ingredients:
Gorikai or Clustered Beans - 1/4 Kg
Oil - 2 Tbsp
Mustard Seeds - 1 tsp
Urad Dal - 1 tsp
Curry Leaves - 8-10
Turmeric Powder - 1/2 tsp
Salt - as per taste
Jaggery - 1/2 tsp
Method:
1. To a small mixer jar, add 1/2 Cup grated Coconut, 2 broken Red Chillies, 1/2 tsp Cumin Seeds and 1/2 tsp Mustard Seeds and grind it without adding water. It should look like powdered coconut.
2. Add 2 Tbsp of Oil to a pan. Once the Oil is hot, add Mustard Seeds. Once the Mustard Seeds splutter, add Urad Dal. Once it changes its colour slightly, add 8-19 Curry Leaves and mix once.
3. Now add finely chopped Gorikayi or Cluster Beans and add 1/2 tsp Turmeric Powder. Mix well.
4. Now add 1/2 Cup to 3/4 Cup of water and mix once. Close the lid and allow it to cook in medium flame for 10 minutes.
5. After 10 minutes, the Cluster Beans or Chavalikai are cooked and absorb water. Mix once and add Salt as per taste and mix once.
6. Then add 1/2 tsp Jaggery and mix once. By adding Jaggery, the taste of the Palya or Sabji is enhanced. By this time the water in the Sabji/Palya should have evaporated.
7. Now add ground masala or Kai Sasive and mix everything once. Cook this Palya for 5 minutes.
8. Now add Coriander Leaves and mix once. The Gorikai Palya or Clustered Beans Sabji/Fry should be dry before you switch off the flame.
Now Chavalikai Palya or Gorikai Palya or Clustered Beans Fry is ready to serve. Serve with plain Rice. Quality cooking wares that I love and recommend. Many of these I use every day in my kitchen and in the videos as well. Thank you.

Madam is the grated coconut used in the curry is dry coconut or freshly grated Madam. Which one we have to use in the curry.
Fresh coconut should be used. Not the dry one.
