You should make a vid about quick pickling for those of us who do not yet have the supplies, kitchen space, or the garden but still want to preserve what we can.
@@TheBourneHomestead I did! What I want to know is how do you get the peppers to stay under the liquid after you've added everything to the jars to keep the 1/2" headspace? Mine peppers kept wanting to float to the top and pop out of the liquid even after squeezing the air bubbles out several times. Did I not pack the jars full/tight enough to get them to stay down or what?
Haha I know what you mean! I pack them in as tightly as I can using one of those wooden pickle packers. Getting the air bubbles out is a challenge because all the peppers try and escape and I have to do it all over again. I think this year I will try using chopsticks to get the air bubbles out and not the bubble tool that comes with the canning sets. But it’s kind of a dance back and forth of pushing them down and removing bubbles, pushing them down and then putting the lids and bands on. Sometimes it helps to do only one jar at a time even though it can seem tedious.
I'm sorry you didn't get enough this year, there's always next year or depending on where you live farmer's markets are usually a great place to get peppers. ❤️
I think I did use a knife and made cuts into the peppers. Also I recommend using pickle crisp(calcium chloride)! They tasted great but the whole peppers were kind of mushy. The cut peppers are ok though without the pickle crisp.😊

Did you put the peppers in whole or did you poke any holes for air to escape?
