Hi Anthony! I see several people mentioned that the udon noodles were soft because they were over cooked. Not that you’re looking for suggestions to make the dish better but something I like to do is add depth to the broth by starting with sautéing some garlic, ginger, and onions and adding my broth in a little at a time, letting the mixture deglaze, really taking my time (over an hour if you have it). Then at the end you can strain out or keep the garlic, ginger, & onions and have a very flavorful broth! Also some scallions at the end will make a beautiful touch as well! Thanks for your content! 💚
I love the new ideas Anthony. Whenever you want to use the drippings from your pan for more flavor, try taking some of the broth , add it back to the pan, heat it up a bit then pour it back into the pot
Suggestions, instead of liquid broth go back to the better than bouillon paste and water, you can build stronger flavor that way. Put the broccoli in the water right away, once the water boils turn it off and add the UDON noodles, they're mushy because they're overcooked. Your outside set up is ever changing and always getting better! I recommended your channel to Driftin in2 freedom because she's a car dweller and having tons of trouble with her tent set up! I hope she looks you up cause you got it going on!! 🥰

I change colors every summer😃.. Helps with blocking sun(heat) & protects against cold air. You are doing it right. What a great idea with the shower curtains. It protects you from the weather and you’re not blocked in as far as still seeing your surroundings. What about using one by your kitchen and the table.attached it to van and pull it out like the side one and you can still cook and won’t be getting wet. Just a idea.❤
Anthony, Suggestion. Thinly slice the beef so that you can cook that in the broth at the end of your cook. As for the noodles, cook the noodles separate and bring everything together with the broth at the end. This allows you to cook the noodles to your likeness. Use cold water to stop the cooking of the noodles. The warm broth will warm them up. For the dish, cook it all separate and focus on the broth to bring everything together. Try soba noodles.
Anthony, I really loved the cosy feel of this video. The table cover is gorgeous, the rock and candle, so homey. But you cooking inside your little car house, with the rain outside, the lights and soup inside. Just so comforting. Lovely. Don't worry about anything Anthony. Everything is all right.

Hey Anthony the beef broth will not add too much flavor but pro tip for adding tremendous amount of flavor in any soup Ian’s u can and should use water is something u can find in an hmart or Korean market is something called dasida. It’s pronounced dah-shi-dah. It’s a powder and comes in a big packet with a picture of beef on front of packet. 1 tablespoon per couple of cups(suit to taste) with some scallions (and scrambling an egg and drizzling it over couple minutes b4 done) makes a wonderful rich broth. Oh yeah the udon in the packets is already pre cooked so only cook for 3-4 minutes. Also if ur worried about tough beef- at the hmarts u can get pack of sliced thin beef ribeye that Koreans use for bulgogi. Super tender. Same cut as prime rib and make great cheesesteaks. From a foodie who enjoys ur peaceful videos.
Love the shower curtains. Yes dont over cook fresh noodles. You need to try some authentic Korean food the flowers are great. Look for a Korean restaurant and order Bulgogi (BBQ korean beef) cucumber kimchi (fermented veggies) yakimundu (like a small triangle eggroll) korean spare ribs yum
Next time you make the soup you should put the noodle in at the last minute the noodles is already cooked so you only need to heat the noodle through no more than 3 minutes in the broth with the broccoli and then go ahead and add your beef back in there

Just a tip for the udon... they are a soft noodle so you don't boil them. You put the noodles in the pot right before you remove it from the heat. It shouldn't be cooked for m more than 3mins.
Noodles don’t take long for sure. And as far as the beef, you should try beef kabobs on your grill, beef cubes and veggies like onions and peppers. Or you could do chicken kabobs with pineapple.

Anthony, you have to remember the noodles are precooked & don't require the amount of time you are boiling them for. Also, looks like you have the heat too high so everything cooks faster. That may be why the noodles are so mushy .
You gotta deglaze the pan while it's still hot - just use a little beef broth and the browned bits will scrape off easily. Then you can pour it all in your pot.

Love your idea of using shower curtains for sides on your canopy. At first, I thought it was just plastic sheeting. As for the Udon noodles, you cooked them too long. My mom (RIP) was Asian and she made udon all the time and they were never mushy. They should be chewy. Udon only needs to be cooked 3 minutes. If it were me, I'd cook them in the frying pan with some beef broth, soy sauce, and fried rice seasoning. Make your beef broth with broccoli and beef/seasonings. Add your udon to the bowl and pour the broth and beef over top.
Hi Anthony, You can try and get another canopy and put it in front of the table there. Put tarpaulin on top of both the canopies to keep the rain out. Creative with shower curtains.
I was going to say to put that goodness in the beef broth. You could've cooked it in the same pan as well. Season your broth, just like you did your meat. You could've added the seasoning to the meat prior to cooking as well. Chinese 5 spice powder would work well in this dish too. Onions/scallions would be good in your dish. Try a high quality broth next time too, since the broth is the main flavor. How about a small piece of ginger and garlic in the broth. Just pour the broth on the noodles next time and see if that helps. BTW, I love Kathy. ~M

Hey Anthony! What you are missing is the umami and you can get that with fish sauce. A little soy sauce and noodles 3 min Mac. Broccoli should be cooked first. Don't use Rama yet plz try the fish sauce first. In Asia we use it in everything. Love ❤your community

Hi Anthony, the noodles are mushy because you are overcooking them. Those are fresh noodles. You only cook them for 1 minute. That's all they need.

Put the Noodles in the bowl and pour broth,meat and veggies over Noodles you don't boil them or try glass Noodles also use some hoisin sauce❤

You can try and get another canopy and put it in front of the table there. Put tarpaulin on top of both the canopies to keep the rain out.

I was going to say to put that goodness in the beef broth. You could've cooked it in the same pan as well. Season your broth, just like you did your meat. You could've added the seasoning to the meat prior to cooking as well. Chinese 5 spice powder would work well in this dish too. Onions/scallions would be good in your dish. Try a high quality broth next time too, since the broth is the main flavor. How about a small piece of ginger and garlic in the broth. Just pour the broth on the noodles next time and see if that helps. BTW, I love Kathy. ~M

Hey Anthony! What you are missing is the umami and you can get that with fish sauce. A little soy sauce and noodles 3 min Mac. Broccoli should be cooked first. Don't use Rama yet plz try the fish sauce first. In Asia we use it in everything. Love ❤your community
