Mom's tomato soup recipe:
2 medium onions chopped
7-8 garlic cloves chopped
3 stalks of celery chopped
Saute onions in butter, ghee and avocado oil
Add garlic and celery and saute for additional 5 min
Add 28 oz tomato puree, 2-3 cups of bone broth, and 8 oz can of coconut milk
Add dried parsley and red pepper flakes
Fresh oregano and fresh basils
Let everything cook for 30 min in low
Puree the soup using immersion blender
Serve with fresh parmesan!
