I'm not a fan of last minute sloppy sauces on meat. Just makes a mess and covers up mistakes. I prefer pre marinated or dry rub before cooking.

I'm originally from East Texas, so when I was growing up, there was quite an influence from cajun/creole dishes as well as Texas dishes. I think a cajun/creole/Texas BBQ fusion could be a really great combo. Like instead of boudin, you get smoked brisket in your jumbalaya. Or the po'boy get's pulled pork instead of shrimp. There's some good ideas down that road, I think.

I AM A TEXAN of 55 Years and I do the same when I get a great peice of Brisket. over the past 10 to 15 years cooking Brisket has really become refined. Hands down we are the BBQ capatial of the world.....

TEXAN HERE: They need to visit Chicago! I used to go there on business, with my best friend and BOSS, who was born and raised there. My GOD! The FOOD!!! And the people were so friendly. I was so surprised. I thought it would be unfriendly, like NYC, but everyone was so nice. And it was weird, because everyone knew I was from Texas, because of my accent. I can't tell one southern accent from the other. It's like looking at slightly different colors of blue...they're all blue, dammit.

We lived on Italian beef combos drench in juice and gyros. I swear to God, I gained 10 pounds every time I went there. We never got around to pizza, but there is a real fire baked Chicago style Pizza place right here in Arlington (where the Dallas Cowboys play) which is amazing. It's not Dominoes. I got the thin crust meat lover's with onions, mushrooms and green onions. It has real Chicagoans there too. I called to hear their voices just to make sure!@@alexhusko

Glad y'all enjoyed it, and understand why you'd save the best for last... but I'd always start with the fatty brisket. The fat will never be rendered better on a brisket than when it is freshly sliced, since it will start to congeal as it cools. Thanks for the smiles!!

I'm glad you liked the grits. Good grits are hard to find. Grits should not be a big, thick, clump (that's usually how you find them in restaurants). Grits should be so full of butter that they're loose in texture & have a little "flow" to them like gravy... or lava!!!
What an amazing meal. I'm like Mr. H, with good smoked meat there's no need for sauce! So glad y'all had this experience!
I usually find that too much BBQ sauce (or any sauce) often overwhelms the flavor of the meat. A hint of sauce is okay, but I prefer to taste the actual meat.
When your meat is drowned in sauce then they are trying to hide something. Dry rub all the way.

The great thing about BBQ in the US is that there are drastically different kinds of BBQ and each can be the best. It's amazing the variety that can come out of just a few cuts of meat. When you live in a town like Kansas City, you can get really specific: I like the brisket from Smokin' Joe's and the slaw from Smokestack, and the beans from Wood Lot and the pork ribs from Hayward's....

I'm from Texas but live in Southwest Missouri, and it's not hard to find Texas BBQ, Memphis style, Kansas City style, and so many more in my area... I love the variety of BBQ in this country, and I'm so proud that we can use our BBQ to show pride in our regional cultures

You’re right in that there’s many styles of BBQ across the US but only one is king and it’s undebatable, that’s Texas BBQ.
The food almost brought you two to tears. That is how you know you have had good food.
What I enjoy about watching Brits reacing to all things America so much is that they discover what an endless adventure awaits them just touring the states. It would be like if someone in the U.S. awoke from a coma having no idea where he was and then discovered that a thousand delights and explorations awaited him before he embarked on a journey to see it all. Not everywhere on Earth is safe for Westerners but in America you can pretty much go everywhere and you'll never reach the end of it before reaching the end of your days. The UK and US are known to one another, meaning it's easy access in both directions.
I mean Europe and the USA is almost the same size as far as land mass. Its weird to think but its almost like countries in Europe are like states in USA. There's just so much diversity with food, culture, its crazy. I can't even imagine going to a country and having the diversity like that, literally could take months to fully explore everything

4th gen Texan and there are so many BBQ joints in Texas and I have tried many of them but it would take more than a lifetime to try most of them . I have not even begun and I am 67 .

It is a very hard thing to do for something to live up to all the hype and expectations, and I know yours were very high. Judging by the expressions and comments throughout the meal this BBQ seemed to possibly exceed your expectations. As a native Texan, that puts a smile on my face. It also gives you both some reference points when you are back home trying to reproduce some of the tastes and textures on your backyard grill. 🙂

Here's a shout-out from south Louisiana. In 2005 and 2006, I lived in Ft. Worth and had occasion to try more than one Texas-style BBQ. That area DOES know how to handle beef. But note that there are actually three major BBQ sauce styles... honey-based, vinegar based, and tomato based. Tennessee features all three in the western end of the state.

I'm 62 years old and born and raised in Ft.Worth. Growing up it was hard to find decent BBQ in Ft.Worth I use to drive to Glen Rose,Tx to Hammonds Bbq for really good food. Just over the last 20 years Ft.Worth's BBQ has taken off like a rocket and keeps getting better.
Back in the '70s and into the '80s, wasn't the "everyman's steakhouse" more of the thing than barbecue? Many rungs below Delmonico's on the ladder of hoity-toity-ness, you could go out one night a week and get steak dinners for the whole family without breaking the weekly food budget. And those who didn't like steak could get chicken, fish, or a burger.Around Fort Worth I specifically remember Steak & Ale and The Hayloft, but there used to be SO MANY. There were national chains and regional chains we'd see (and even stop at) on vacations -- Western Sizzlin', Bonanza, York, Steak+4, Black Angus, Ponderosa, Sizzler, Mr. Steak, and so on and so on -- with so many outlets that they must have oversaturated the market just in time for the healthy eating trend to kneecap the industry. 🥩

In other Fort Worth restaurant news, not only are the steak emporiums closed -- I heard recently that Pulido's closed up shop. Sad to lose that connection to good memories of Texas days. But I always remember this lesson learned there: Serve warm tortillas + butter with your spicy Mexican food, to cut the heat.

I don’t know if you realized it but, you paid an immense compliment to the hit master and his cooking staff when you said that the barbecue didn’t really need sauce. You see, there are two components to the barbecue besides the meat and the would you smoke it with, of course. You have the rub and you have the sauce. You know you’re doing a good job when your rub is so good that no sauce is necessary. Most everybody comes up with their own rub. Trial, error and repetition. They all start out with salt, brown sugar, pepper and then, things get fancy with other herbs and spices. A lot of folks get very secretive about their rub. I’ve only shared mine with two close family members. Some people make their sauce homemade with things like brown sugar, ketchup, spicy mustard, honey,soy sauce, sweet-and-sour sauce, garlic, onions and paprika and other people like me just go with something commercial that is also real good like sweet baby ray which you can get at Walmart and just about any grocery store or something like that. I’m real glad you liked real Texas barbecue. You’re next thing to try with it is a barbecue baked potato were you take that chop beef brisket or that pulled pork you like so much and you put it inside a big baked potato and add other toppings to it. It’s glorious.
Going to goldee to try bbq is crazy . Like you said it’s only down hill from here cause goldee is #1 famous by Texans

So glad y'all got to try Goldies now for comparison we need to get y'all to try Terry Black's (another Texas #1 rated BBQ place in Dallas.) Hopefully now y'all understand why we were sounding off in the comments. We Texans are a proud bunch especially about BBQ. Much ❤ from Texas!!
LOve em both. Goldee's exploded in popularity due to youtube. And the staff INTERACTS with customers genuinely. Not fake stuff. They already know they have a reputation to uphold. Same thing with Black's. Here in CA, the staff are apathetic.
I don't know if you've ever tried it before,, but i can tell you from experience,, It's definitely worth making your own homemade sausages,, creating your own flavors, varieties & of course taste testing all of them..The possibilities are almost endless,, with different meats,, blends of meats,, spices etc..I have even made some adding mango,, pineapple,, apple,, peaches,, etc..The only meat i would suggest not using is turkey,, only because it has almost no fat,, which tends to make it dry,, althought it can be done as long as you make sure to add fats & fruits that will both help to keep it more moist..I assume you know that the biggest no-no or sin is that you NEVER make ANY kind of holes/cuts in sausages before or during cooking,, because you will loose those incredible juices that make it so tasty & moist..I've seen many people use a fork on sausages while cooking & then wonder why they ended up tasting bad & dry..By the way,, if youve never had bratwurst (Or as we just call them,, brats) but if you haven't,, you have no idea what your missing..While roasting them on the grill is my personal favorite,, they have also been traditionally made for many years by just browning them some first on the grill or in a pan,, then put them in a pot,, or large pan,, etc. with sliced onions,, sweet bell peppers,, some chicken stock & 1 can/bottle of your favorite beer,, then let them simmer away for 1-2 hours,, they can also be easily made in a crock-pot as well..When making your own sausages,, it's important to remember that they freeze very well to have for later.

Welcome to the USA! Each region has their specialties and are all worth the trip just to taste them. There's just not enough time in the average American's life to try them all. The South's bbq versions, New England's seafood, New Orleans cuisine, Tex-Mex, Soul food...the choices go on and on. The motto is "So much food, so little time"!😄 Truly hope you can find a way to sample much of it. Keep coming back if possible. You'll always find good food and welcoming people. From the looks on your faces while at Goldee's, you'll fit right in! And definitely try Terry Black's bbq if you get the chance. Absolutely amazing too! ❤

You nailed it, and a lot of people never understand this:
The meat on a rib SHOULDN’T fall off the bone. That is NOT the indication of a good rib. That just means it wasn’t properly cooked, and the tendons connecting the meat to the bone were cooked/burnt away.
Also, pork belly is to DIE for, hard to cook properly since it’s 50% fat, but as you probably know…and I’m sure your pork belly and pork ribs were delicious…
But in Texas, it’s all about beef!

Try adding crumbled up bacon in your cheese grits..When eating regular grits,, to make them taste really good,, add lots of butter,, salt,, pepper & crumbled bacon 🥓 👀👅❤️

I will not deny that Texas has some great food! While you are in the general area though I would recommend that you ease to the east a bit and hit Louisiana up as well if you can fit it in. Us southerners really enjoy food. In my opinion you can't go wrong in any of the southern states in that regard.

Kanas city #1 for sauce, Texas got the best bbq IMO but when it comes to sauce I think ours can be to sweet or to vinegar, something like that because it don’t compare to kanas city or some Memphis sauce

I am a native born southerner,, I have made & eaten lots of really good bbq,, But i always wanted to do exactly what your doing,, Unfortunately,, I wish i would have known that i would become disabled & never be able to do so now,, Otherwise had i known,, I would have made sure i did it many years ago..But thankfully at least i feel like im sharing the experience with you.

This place is still on my bucket list, I've been to a lot of the Texas Monthly top 10 best bbq. What sad is I live in DFW and still not tried it.
I dont know where you live in DFW, but try Smoky JOE'S BBQ here in Oak Cliff. It is on the Texas Monthly list. Take I-35 South (towards Waco), exit at Laureland. Stay on the service road for about 2 block. Smokey Joe's is on the right hand side. It's worth the drive and I promise you that you will feel right at home. 😁

I’m so happy y’all finally got a taste of real Texas BBQ. Besides 6 years in the Army, I’ve lived my 45 year life in Texas and I appreciate it immensely. I just can’t imagine what it’s like to try for the first time well into adulthood. It must be an out of body experience! There are many great BBQ joints in Texas but I hope y’all got around to try Terry Blacks which is my favorite. God Bless you and your family.

Though I now live in North Carolina, I used to live in Texas and I can tell you that there is no better BBQ then Texas beef. Hope you enjoyed it.
