I just moved to Missouri a bit ago and can’t find those impossible meat Pattie’s ANYWHERE, so I’ve been trying to get creative with tofu and I actually prefer it. So I’ve definitely gotta give this a try! Looks so good!
Tried this today, tastes pretty great! I'm not a vegan but it hit all the right notes from other homemade chopped cheeses I've made. I will say though for anyone making it, the bake time given in the video is completely off lol, at least for my oven. It took a total of about an hour and a half of baking + a bit of broiling to get things near crispy enough to work for a sandwich, and that's without any of the rehydrating shown in the vid. Just be prepared for a time investment if you go the tofu route!
Mind blown Burger dude! I was engulfed in watching you craft the marinade when my mind wondered why such a rich flavorful marinade, including gravy browning, for a chopped cheese? Perhaps it was just a brain fart, but either way my excitement grew with every cooking step. Then I was sad when the marinade met the Tofu with only slight color change. Cooking the Tofu made a major difference as did rehydrating and reducing the cooking liquid. However, your wealth of knowledge creating great Vegan meats brought that Tofu to a beautiful, crispy, non-meat reduction that certainly rivals any meat-based Chopped Cheese. Nice job!
YES! As a harlemite (let it be known this sandwich originated in Harlem ✊🏾) the bread must be a hero (italian long roll) if you come here (yes you can get vegan chopped cheese in some bodegas) I beg you don’t order it on a Kaiser (or just “roll” here), it may be a more manageable portion but it just hits different on a hero! And for additional fixins I’m team pickled jalapeños or banana peppers all day.

Yeah, Lentils is what I have too. I was considering making it when spirits were guilt tripping me for burning lentils by frying them like a burger. Oh brother, that and I don't have any oil right now. I could really go for a veggie burger.

What vegan cheese slices do you prefer. I just started trying them and the first one I tried was Vevan and it was the most disgusting thing I've eaten in a long time. I'm just hoping it can only go up from there right?

Upgrade your eating experience by using wheat or even better whole wheat bread. It will make it better in more ways than one. You don't know until you try.

Outside of USA, mock meats are incredible expensive. For example, I can buy around ~8 blocks of tofu for the price of 2 beyond burgers.

Why the extra firm tofu. I usually use soft tofu for ground beef type stuff. Can you tell me the differences?

Follow Your Heart does a pretty good Vegan American cheese, but if you want something with a little more substance you can try Violife Cheddar.
