Join us as we prepare "Delicious Garlic Seasoned Bunny: with Rice and Beans." This dish combines tender garlic-seasoned rabbit with creamy coconut rice and beans, creating a harmonious blend of flavors that is both comforting and exquisite.
    Ingredients
    1 rabbit, cut into pieces
    1 head of garlic cloves
    1 bunch of parsley
    1 bunch of rosemary
    1 bunch of thyme
    1 cup of white wine
    2 liters of chicken broth
    250g basmati rice
    1 white onion
    1 fennel bulb
    1 leek
    1 can of coconut milk (300-400ml)
    1 can of red kidney beans (400g)
    Microgreens for garnish
    Salt and pepper
    Extra virgin olive oil
    Preparation
    Cook the Rabbit:
    In a large pot with olive oil, brown the rabbit pieces. Once they are browned, add the halved head of garlic and allow it to toast.
    Add the rosemary and thyme, deglaze with white wine, and add 1 liter of chicken broth, or depending the need with the rice you use. Simmer on low heat for 35 minutes (also depending on the type of rice you use).
    Prepare the Fennel:
    Cut the fennel bulb in half. Dice one half into small pieces (brunoise) and thinly slice the other half with a mandoline. Place the sliced fennel in cold water and set aside.
    Prepare the Vegetables:
    Julienne the white onion and leek.
    Cook the Rice:
    In a pan or pot, heat some olive oil and sauté the julienned onion, leek, and diced fennel until translucent.
    Add the basmati rice and sauté for a couple of minutes. Mix in the coconut milk.
    Once combined, cover with 1 liter of chicken broth. Bring to a boil and then simmer on low heat. After 6-7 minutes of simmering, add the washed and drained red kidney beans. Continue to monitor the rice to ensure it doesn't overcook.
    Presentation
    Place the rice as the base on the plate.
    Arrange the rabbit pieces on top of the rice.
    Drizzle with the rabbit sauce.
    Garnish with the reserved drained fennel slices and some microgreens.
