    Nice job and experiment on this stack mod. I got to get an offset in my backyard after I move back in. Watching all these cooking videos the past 1 1/2 years while my house was rebuilt, has improved my knowledge of how to BBQ right and I need to see if I can put it into practice.

    They do make aluminum 3in elbows which is what I have on my OK Joe. They are a little bit harder to find but if you want to save $20 and don’t want to risk using galvanized its another option.

    I bought a stainless steel elbow so I’m all good. :-) A bread baking tin with the end cut off works like this mod you just did. Super cheap, too. Please do more vids on the OJ. I’d love you to do a beef ribs cook.

    I just built a bolt on smoke collector with a 4 inch stack 36 inches long. My Oklahoma joe highlander works perfectly. Thinking of having the design run off in bulk and sell them for about 350.

    Hey James, I have the same Oklahoma Joe and on that same website that you got the outlet relocation plate from they actually make a replacement firebox too. I have looked and looked and have not found any info on it; would be great to see you try it out! Maybe it helps with the size of splits you can use?

    As I have watched your videos for a year, I wonder what you use each smoker for? Is your kamado better for some foods than your offset, and vice versa? I use a vertical offset for heavy beef like brisket, an Akorn kamado for medium meats like pork butt and chicken, and pellet smoker for gentle meat like pork loin, jerky, fish.

    That is a good improvement for cooking space.

    • @SmokingDadBBQ

      That’s the real reason for me (as I did check the temp issue before showing it and was comfortable I wasn’t risking mine or anyone’s health) is gaining back useable space

    I have this mod on my Oklahoma Joe smoker. My smoker never gets above 300°F. Most of my cooks are in the 225-250°F range.

    • @SmokingDadBBQ
      @SmokingDadBBQ  ปีที่แล้ว +2

      I don’t either which is why I wasn’t concerned and showed it but judging by the comments you’d think my video had a death wish for humanity so I thought I would show the temps it takes to get close and provide an alternative

  • @charlesf4428
    @charlesf4428 ปีที่แล้ว

    Just install a heat deflector Baffle plate for a more even temp throughout the cooking area. Once again, why do you build your fire on the bottom of the firebox? OKJ was not designed for that. Using the extra grates provided, it levels up your fire and allows you to scoop out the ash during the cook...increasing air flow and a much more efficient fire. I HAVE done this to my OKJ with perfect results!

    • @SmokingDadBBQ
      @SmokingDadBBQ  ปีที่แล้ว +3

      Just responded on your other question so reposting it here....
      Having the fire higher/drafting into the cook chamber isn’t ideal, that’s why the firebox on all offsets is as low as possible while still overlapping the cook chamber. Hot un-tempered gasses would be like cooking a brisket with my grill blazer gun and dry/crisp things up.
      The grates are predominantly for ash which you get more of when using charcoal. I’ve done it side by side and I have plenty of other grills that burn charcoal for heat and use wood for flavour and it’s not the same result as going just wood.
      This is the last video on the stock firebox floor, my semi insulated firebox is back in from here out as it helps its perform just like my larger offsets, non of which use charcoal grates and non of which try to get the fire up higher
      There is an infinite amount of options, I am not saying my way is right but my goal is to get food to be as similar as possible to larger offsets and this approach does better than all the others I’ve tried when comparing the results side by side
