    Great video thx Maddie. Off topic I know, but you being in Ashwell brought back fond childhood memories, what a lovely little village it is, just off the A1, used to go with my parents to a small knick-knack place there as a young kid near the natural spring to get little Christmas stocking presents, what a magical place it was. No longer there, but I remember it clearly!

    The issue that people never like to mention in these videos and in some recipes is the ratio of water to flour. If the dough is too dry it can never expand properly. I made some buns like this recently and I tried 70% water to flour - it was very good. Having a machine to kneed the dough is also important because it means you can really get the dough to be very stretchy and you're not tempted to add lots of flour to help you kneed it without sticking.

    Can you not get cubed non powdered yeast in the UK?
    Here in Sweden i get 50 gram cubes of non powdered yeast in the supermarket.
    I can can packages of powered yeast too if I would want that.
