- Si hay alguna comida que sea representativa de la gastronomía de Semana Santa de nuestro país, son los potajes de legumbres. De norte a sur, a lo largo y ancho, son las recetas estrellas de este periodo.
En mi casa somos súper fans de las recetas de cuchara, y este potajito de cuaresma es de nuestros favoritos. Tiene un sabor delicioso, debido a la combinación de sus múltiples ingredientes. Cada vez que lo hago, sobre todo cuando hace frío, se siente en toda la casa un aroma envolvente muy umami. Huele a comida casera, huele a hogar.
Ingredientes:
- Garbanzos, unos 400 gramos
- Unos 400 gramos de gambas y gambones
- 1 cebolla,
- 3 dientes de ajo
- 1 zanahoria
- La parte verde de un puerro,
- Un manojo de kale, unos 200 gramos
- Tomate frito, unos 150 gramos
- Brandy, unos 75ml
- Aceite de oliva virgen extra
- Sal al gusto
- Pimienta blanca al gusto
- Azafrán, unos 0.003 gramos
- Una cucharadita de café de pimentón rojo dulce
- Caldo de pescado, sobre 1 litro
