Takeda Hamono is the master with glases at 2:30. I meet him at the knife maker show in Olching/Germany oct. 2010. He is a likeable guy and i speak with him a long time about the japanese art of knife making. he only use class 1 white paper steel for the middle layer. His knife is the sharpest one i have - forget any razor blade.
Yes, use the gray side. Don't neglect to work the entire edge, not just the dents, otherwise you create low points in the edge profile. I've been using one of these since 2006 or 2007 when I bought a Nakiri Takeda at the Chicago Knife Show from Shosui Takeda.

The toishi whetstone is easy to use and very effect with less effort than stand alone series of block whetstones. Search for Takeda Hamono and look for the links to the nimi odayama website.

Shosui Takeda is his name. Takeda Hamono means “Takeda blades” or knives.

Thank you! I'm used to lay my stone on the bench and slide the blade on it. Now I'll try your method, maybe it's easier to set a constant angle.
