    Fried Eggplant(with egg): Eggplant(Talong in Filipino) Torta or Tortang Talong..i pair mine with ketchup😅
    Rice Soup: Lugaw(Filipino)/Arroz Caldo/Pospas(Visayan)...best with crispy garlic, chives, and sesame oil🥰
    The fried fish needs a dipping sauce(sawsawan) : Soy Sauce, Vinegar and Calamansi or a side dish of pickled papaya(atsara)
    Glass noodle/Vermicelli Soup: Sotanghon..(could be with chicken or pork)
    Milk Fish: Bangus(Filipino)..best part is the bangus belly..good when friend or braised in sweet vinegar(paksiw)..but i guess you had the sour soup(sinigang)

    Hi chef... let's start with the eggplant omelet , it's called tortang talong. The eggplant is roasted not fried.
    The rice soup comes in 4 varieties:
    Plain - it's LUGAW
    With chicken - it's arroz caldo
    With tripe - it's goto
    With intestines - it's tumbong
    Noodle soup is sotanghon with vermicelli rice noodles
    Milkfish soup - sinigang na isda ( belly is the best) that's dipped in fish sauce and chili
    The sword fish is daing...marinated in vinegar, garlic and pepper.

    You can actually ask for condiments from the counter, they should be able to provide you with soy sauce, vinegar, catsup, chili, calamansi, and any other stuff you need free of charge. You can also ask for small bowls to mix them up. The rice soup is called lugaw / arroz caldo and the eggplant is tortang talong.

    Hello Chef Curtis. 😊 I love your reactions when you taste the SINIGANG -- the sour soup with milkfish as well as the salted fish. Haha. The name of the fried eggplant is RELLENO. Yes youre right, the relleno tastes even better with soy sauce. The name of the rice soup or porridge is ARROZ CALDO. The small boiled egg is QUAIL EGG which is in SOTANGHON soup. Just wonder, when did you start enjoying Filipino food? Your curiosity ends when you try it. 😊 Great to see that you love it. Weird but delicious. 😁 Your vlogs speak for itself that Filipino food deserves some recognition.

    I live in the East Coast. Every time I visit my family in the Ontario area, I always go to the Seafood City in Ontario. That kind of restaurant is called 'turo-turo'. You point what you like. Unfortunately, we don't have a Seafood City in the Washington DC area.

    The rice soup is either arroz caldo or lugaw. The fish soup is a bangus (milkfish) sinigang. Keep it up, Chef! Maybe just update the name of the video to “Fresh Catch Supermarket” in Artesia, CA.

    Chef the rice soup is called Arrozcaldo, but we normally put calamansi in Arrozcaldo.

    That rice soup is called arroz caldo Curtis and normally they will give you lemon or calamansi to put in it. That eggplant is grilled and with scrambled eggs, then fried. Grilled fish or fried, we normally have dipping sauce and good mixed with rice. Go home and make your own dipping sauce, but make sure you add lemon, soy sauce and hot pepper just to add some heat...

    The eggplant with egg is really good. My aunt would roast the eggplant over fire to burn the skin and she peels it off. Mashes it down kind if flat then takes a couple of scrambled egg and cooks it in a pan. The rice porridge is called lugaw or arroz caldo. I love arroz caldo on a cold day. Comfort food. I really love nilagang baka eaten with rice and spicy patis. That is some major comfort food. You gotta try it.

    The Arozcaldo is our favorite too I used to suatee some chop chicken with onion and garlic and pur all of them. In a pot of boiled rice in ginger... Oh my God so delicious 1 small cup of rice will go along way of porridge...

    You had Chicken Sotanghon with Quail Eggs. Always asked for on cold evenings. What really pairs with your fish on rice. That's an excellent small lunch for many. Much Like!

    The eggplant omelette is called tortang talong. Goes wwll with catsup too. The porridge is called goto. Fish sauce with calamansi goes well with that and the noodle soup. Noodle soup is known as sotanghon

    If you tried lechon kawali for several times... Then look for bagnet, a traditional tribal lechon kawali from ilocos region northern philippines... They have bagnet in some stores in US..

      Well since the Covid hit most restaurants here in the US they replace all the utensils with plastic forks and spoons , I like to use them also Coz some restaurants here theirs utensils are dirty specially forks they just throw them in a dishwasher without sterilizing it …. Specially with covid nowadays people’s are careful eating in the restaurants

    I like my tortang talong (fried eggplant) with soy sauce,vinegar and shrimp paste... you should come out to Daly City, CA. It's like Filipino town of the San Francisco Bay area. You will have so many Filipino restaurants to blog on.

    wow thats fast chef curtis the rice soup is what i told about breakfast . it is called lugaw or goto. you can pair it with boiled egg, soysauce and calamansi. the other soup with rice noodles is also for breakfast , that was what i told you the sotanghon, the fried eggplant is best paired with banana ketchup. you could ask the restaurant for a little banana ketchup. im waiting for you to try , fresh lumpia, champorado (chocolate pouridge) and sopas . i know you would love that

    Rice porridge is called lugaw, with chicken it is called arroz caldo, if that has a beef tripe it is called goto, its better with tokwat baboy( tofu and pork) in spicy soy vinegar sauce
    Tortang talong is fried egg plant with egg but its more delicious with ground pork

    The sour soup is called tamarind soup and it's made of tamarind fruit. The glassy noodles is called sotanghon soup. I'd like you to try the Longsilog, tapsilog and tocilog. You'll gonna love it especially the fried tocino. Yum!

    Magandang araw, Chef!! (Means, good day!!)
    Rice porridge is lugaw. Add fish sauce or soy sauce with calamansi (lime).
    The eggplant omelette is tortang talong. Some variants mix it with ground meat with chopped onions and tomatoes. Try with soy or mayo dip.
    The noodle is sotanghon. Rice noodle in chicken broth.
    Sinigang na bangus (milkfish). Tamarind and tomato-based broth with other spices.
    Filipino foods = "Kanin" (rice) is life!!!!

    the eggplant you eat it with banana ketchup, the Soup with vermicelli noodles is , Sotanghon Soup..... you should have gotten Allen's BBq pork its very good, good eating chef...
    they have condiments just have to ask the ladiy in the counter...

    That sour soup you get is called sinigang. It usually has pork or fish in it. By the way you react to it you would probably enjoy it best on rice. Most filipinos will tell you that their mom makes the best sinigang. Its a standard dish that most filipino moms make.

    The egg plant us tortang talong, next time you see it ask them if they grill them first, its usually grilled and remove the skin for that char flavor, but some lazy shortcuts they make is they just boil them.....

    A lot got the milk fish soup wrong. They said it's Sinigang. No, it's not. It's what we call Paksiw. Just like Adobo is a way of cooking, Paksiw is also another way of cooking. When you say Paksiw, it's main ingredient is vinegar. Ingredients are Milk fish, ginger, onions, long chilis, vinegar, fish sauce, water and a bit of sugar. We refer to that as "Paksiw na Bangus". As for the eggplant, majority of Filipinos put banana sauce as condiment.

    Chef Curtis, you have to mix soy sauce and calamansi together to make that swordfish banging and Fish sauce ( patis) and calamansi to slightly dip in that Lugaw ( rice porrage) you want to talk about the flavors bangin, Oh yeah those sauce combos will do the trick ;) Happy Eating Chef!

    Chef try making that fried eggplant as your breakfast dip it in ketchup its good paired with rice. It's a common filipino breakfast

    Like everybodies comment the rice soup it could be arrozcaldo if there is chicken and if there is tripe we call it goto. And it’s good if you squeeze a calamansi or lemon , fish sauce , fried garlic and pepper. The eggplant dip in banana catsup or soy sauce with calamansi and the milk fish yes it’s addictive for sour taste if I’m not mistaken I think it cooked in vinegar we call it Paksiw ...👍👍👍👍

    Try doing the Bangus Sinigang first (by itself I prefer) paired with the Lechon Kawali + The Tortang crab Talong. One helluva lunch everytime. Promise. Nice Vlog Chef. Peace Out.

    brother.. i think its time for you try sometimes the exotic food or bizarre food of philippines...and go to the next level .. like worm talimok and leaf worm hehe
    and kagaykay insect that eating rice plant...i tasted it its delicious
    btw that LUGAW that rice... put some tofu, pig and sauce of sweet sour vinegar with soy sauce..its super delicious

    Most Pinoy food is best complemented with different condiments. I can't fully enjoy them without it so it 'slightly' annoys me when they don't give foreigners or people unfamiliar with the cuisine some condiments. It's better that they get the full experience. Like ketchup will go well with the fried eggplant. Soy sauce and calamansi will go well with the goto--since you mentioned there was tripe (rice porridge) and the milkfish soup. Lechon kawali should have a liver sauce (Mang Tomas brand also ok). I think the noodle soup you had was sotanghon.

    All our food is good. That’s why we seldom go to restaurants. We just cook at home. Those food you are eating and the food in that restaurant are basics home food we have.

    Mostly we don't use soy sauce we use patis (fish sauce) or vinegar

    Filipinos don't use knife to cut while eating, they just do what you just did, use the side of the spoon to cut. :)
    soy sauce is nice with tortang talong but catsup works great too :)
    i also add black pepper and soy sauce to my lugaw (if needed)
