Wazwan is a multi course meal with roots in Central Asia. It was brought here by Sufī missionaries who thronged Kashmir in the 13th and 14th century CE. It's relished on weddings and relished by one and all. PS: You get authentic wazwan only in weddings where it's prepared in traditional manner, on firewood and coal. Wazas (chefs) vary the fire and heat for every dish. Like tabakh maaz is prepared on seething coal (no fire is used) while vessels containing ristas & goshtabas need a lot of fire, while preparing as well as while heating when ready to be served to guests. Wazwan prepared on gas stoves comes nowhere close to it. Try to gatecrash a Kashmiri wedding someday to relish the real wazwan ;-)
I was in Kazakstan for 3 months and in Kyrgyzstan for a month for energy projects - both Central Asian countries. I was not able to find Wazwan dish there. But I love their Kumis and Beshbarmak dishes.

You should visit Kashmir in October. The weather is amazing. Srinagar is little hot but as you move forward, the weather starts getting excellent. We enjoyed the snow too. And there was little rain as well. But the whole journey was beautiful.
