Born and raised here in Philly and as a cheesesteak connoisseur who has tried all the top spots there are many annoying myths. First if anyone says we sell a “Philadelphia” cheesesteak then it’s no good lol. It’s just called a cheesesteak. Secondly and maybe most annoying to Philadelphians, absolutely NO bell peppers on it. You can’t even get it on cheesesteaks if requested. All the spots have whole cherry peppers or those banana peppers that you can throw on yourself. The bell peppers thing is crazy … no one here ever ever gets that. The main big name spots all use sliced ribeye not sirloin and the roll is maybe the most important thing, crunchy shell with a soft inside. There are numerous top notch roll bakeries in Philly because hoagies and cheesesteaks are so popular, some prefer a seeded type roll and others unseeded. The only topping when you order is fried onions (others say grilled onions, sautéed onions but when ordering it’s fried onions). And finally another myth is the cheese wiz. While wiz is a choice the original cheese used by Pats Steaks (inventor of the cheesesteak) the first cheese was provolone then American then wiz came last. I feel most places use American or Cooper Sharp. I highly suggest TH-cam Angelo’s and John’s Roast Pork, they are both in South Philadelphia and usually considered the top 2 overall spots. And also the meat is never seasoned.
I’ve been watching from day one and finally wanna comment, and all I’d like to say is I would KILL to eat something that both tastes amazing and is super spicy with you. I really wanna see you eat something CRAZY spicy, and if I could have a meal with you it would be my local Indian joint’s lamb vindaloo at a level 10.
