    Thai BBQ Chicken Skewers
    750gr Chicken
    6 large skewers (soaked in water)
    Marinade
    1 tbspn Coriander Seeds
    1 tbspn White Pepper Corns
    4 cloves garlic
    1 bunch Coriander roots
    2 tbspn Oyster Sauce
    Sea salt
    150gr Can of Coconut Cream
    Cucumber Salad
    For the dressing
    3 Garlic Cloves
    4 Red Chillies
    5 Limes - juiced
    4 tspn Fish Sauce
    1 tbspn Palm sugar - check if more is required
    1/2 Bunch Coriander - chopped
    2 large Cucumber - sliced
    1/2 bunch fresh Corainder leaves
    1 Red Onion - finely sliced
    Nam Jim Jeaw
    2 tbspn Rice - toasted and ground to a powder
    2 tbspn Chili Flakes
    3 Shallots - finely sliced
    1 Spring Onion - finely sliced
    5 Likes - juices
    4 tspn Fish Sauce
    2 tbspn Palm Sugar
    2 tbspn Tamarind Water (optional)
    Method
    For the chicken
    1. Toast the coriander seeds and pepper corns until fragrant
    2. Pound the slices into a powder add garlic and coriander seeds and pound until it forms a paste
    3. Add coconut cream and stir through
    4. Season with sea salt
    5. De-bone the chicken thighs
    6. Take the skin off
    7. Cut the chicken into 1 inch cubes and place into the marinades
    8. Marinate for at least 6 hours or overnight
    9. Skewer the chicken using soaked bamboo skewers - make sure to have minimal skewer exposed to prevent burning
    10. Grill on medium high grill, basting with left over marinade until nicely browned and cooked through
    Cucumber salad
    For the dressing
    1. Pound garlic and chili into a paste
    2. Add the lime juice and fish sauce
    3. Stir in the palm sugar until dissolved
    4. Add chopped coriander and stir through
    5. Place the sliced onion into boiling water for 20swconds
    6. Drain and place into a bowl, squeeze one lime and stir through
    7. Place cucumber, onions and coriander into a bowl and dress with chili dressing

    1. Places all ingredients into a bowl and stir though
    2. Check balance of sourness and sweetness and just accordingly with lime juice or palm sugar to balance
