I made this today. My 10 year old son helped me make it. He and I love your videos. His favorite part is always when you whip cream cheese. He finds it very “satisfying” 😂. The flan was excellent. I wasn’t able to make the caramel when I mixed water in it so I made a dry caramel with just sugar. I might have caramelized it too much but that actually contrasted will with the sweet custard. Thank you for the very precise measurements. It takes the guesswork out of things.

Nice! I love flan. It’s one of the traditional sweets in our fiestas. One of my comfort food. 😊 We call it “leche plan” which is derived from the original Spanish word. We actually got the recipe during the Spanish colonial times in the Philippines. Our version though has lime grind on the bottom mixed in the sugar caramel and the whole raw flan is steamed. In other regions it’s hand mixed on slow fire in a wok to make it creamier and chewier. And we only use egg yokes, evaporated milk and condensed milk. We also use an oval metal tray as tradition. Well I guess every region has its own delicious version like yours. Awesome! 👏

    Caramel Custard:
    5 tbsp sugar
    1 1/2 tbsps water
    1 tbsp hot water
    1 3/4 cups + 1 1/2 tbsp milk
    2 tsp sugar
    1 tsp vanilla extract
    4 eggs
    2 egg yolks
    3 1/2 tbsp sugar
    Whipped cream:
    7 tbsp heavy cream
    1 tsp sugar
    1/2 tsp vanilla extract

I made this using my scale. I wish the pan size was specified. I used a standard 8.5 x 4.5 inch loaf pan (nonstick, stainless steel Wilton one). My pan wasn't as full as the one used in the video, so my flan was more shallow. I think they're using a 6-7 inch loaf pan. I added extra vanilla. I baked it at 300 degrees Fahrenheit for 45 minutes. It came out well! Not too sweet, smooth, and creamy. Didn't have a stinky egg smell. I'd probably make more caramel sauce next time.

Mine is in the fridge right now. After baking for 50 mins at 150 degree c, it was still liquid so I baked it for an additional 30 mins at 200 degree c. I'll edit this comment tomorrow to let you know how it is.
Edit: this is amazing. This is the best flan I've made 😍💖💖. But mine was a bit jiggly but it managed to even retained its rectangular block form. I used an aluminum mould. It came off easily. The level of sweetness is perfect too, considering that my family doesn't like sweet things. Thank you hidamari cooking for this recipe😇

I made this last night after halving the recipe and let me just say that this recipe is SO GOOD. I’ve been craving purin for sooo long but I never thought I had the right ingredients.
This recipe came together so easily and quickly and the result was delicious! Not too sweet, not eggy, so jiggly and velvety. Just perfect! The only truly hard part is getting the caramel right, but even that was super simple! I’m going to try more HidaMari recipes! 🤤🤤
One note: I did grease the sides of the pan with butter just in case but I’m pretty sure that’s not necessary. Just loosen up the sides with a knife.

Every time I make flan it comes out perfect, it tastes very good. I have 2 problems. 1. It's too sweet, I can fix that by using less condensed milk, or milk and sugar instead of condensed. The second problem is the one I haven't been able to fix yet. 2. After it's done and has cooled in the fridge, I flip it over and it always has little bits of something in the caramel. I tried pouring out the caramel and pouring it back in through a strainer, but it still has some pieces in it. I want it to look like this one, without any bits or cloudiness. I cook mine the same way in the oven, just a different container, at 375f for 15 minutes then cover and turn down to 350f for 40 minutes. I think I'll try it at 325f for one hour.

    • @KittenBowl1
      @KittenBowl1 2 ปีที่แล้ว

There’s no condensed milk in the recipe. You need to use heavy cream not condensed milk which is like caramel on its own. No wonder yours didn’t turn out like hers. We never use condensed milk in custard baked pudding. It’s eggs, milk/cream and sugar. No condensed milk.

Guys I tried this and it’s great but add condensed milk to the eggs!
Also ONLY 3 eggs and one yolk. It’s WAYYYY too eggy if you use this recipe.
Also I found that the caramel the second time I did it with no water was a way better technique over using water. Easily can put too much and the adding water after it’s done cooking quickly overcooks it and makes it black.
Just make the caramel with only sugar in the pan and no water I promise you it’s better. 1 cup of sugar no water. WHITE CANE SUGAR!

Also, I used a microwave instead of oven cuz I don't have a oven. I microwaved the large bowl for 5-7 minutes and small bowl for 3 minutes. It turned out good with a microwave too!
