The doors are part of the engine thrust reverse system. A company called Aircelle makes the engine nacelle (including the thrust reverse system visible in the video) for the RR Trent 700, and the system involves four pivoting doors that redirect the bypass air from the turbofans. This quickly reduces thrust from the engine and it also creates additional drag, helping to slow the aircraft.
