I much prefer being able to make super thick bacon. Normally I wet brine in some whiskey, but I needed all my cheap crap for the video following this one.. Appreciate the support!!!
Nicely done, I think I'll try bacon again. What wood did you use for the smoking and what do you think of the "Jealous Devil" pellets? They're a mix of apple, hickory and cherry..
Homemade bacon is so good. For this, the first two tubes were hickory, and the last was just a mixed blend, some cheap stuff from PitBoss. Cherry and Apple would have been great too.
I make bacon 3 or 4 times a year, for the last 10 years. This is the best I have seen. The trick is not to get the fat rendered when smoking and it will fry much better ( not burn). Ok, My trick is to put the belly in a bag then pour on the salt and sugar brine. It saves the step of salting and then getting it into the bag.. Anyway. You are hereby excused for no sauce. Bacon doesnt get sauce. Good job

can never say no to bacon. looks great! I have a slab of pork belly in my freezing waiting for me to do the same thing!
Homemade bacon is so much better than the stuff from the store. Plus you can use the uneven sides to make a few bacon burnt ends.

true ric, so much falls off just throwing it in the dry or wet brine it would be better to just bag it before adding the salt mixture. Great tip!!!
