Gonna guess that they were acting in the sense that they rehearsed it a few times and had probably at least a couple of directors telling them how to walk/carry themselves and what kind of feeling to emote.
What role did he play that was a villain? He was Sirius Black, Winston Churchill, Commissioner Gordon... The only one that comes to mind is a corrupt cop in Léon.
Gary Oldman and Dafoe just embody everything about being a legend in the game… two absolutely insanely good actors who continue to act and make some of their best work late into their careers…

That's why they find a role that fits with their acting style. There are plenty of actors who do just play themselves but I wouldn't disrespect Dafoe who has put in the effort to be a good actor imo.
