How would I work out temperature outgoing using tables, if temp & pressure inlet are known and so is w? (both temp & pressure change over turbine)

Assuming you also know the outgoing pressure, you would solve for the outgoing enthalpy. Use that number and the pressure to find the corresponding temperature in the tables.
