If staked correctly, how much wind force (e.g. wind speed) is required to rip the stakes out the ground and collapse the tent? 40mph? 50mph? Greater?

We've only tested it up to 40mph and the wind did nothing to it.... hardly looked like the wind was paying any attention to it. :)

Do all the Flex bows come with metal stake loops now?

Yes, it does have the metal stake loops fortunately.

can you fit a large cot in ther maybe bunk cots

Most cots fit in there just fine. It's not necessarily the size, but the height of the cot that can be problematic. You would definitely want to measure that against the height of the tent.
