That looks so good! I make something similar with sauteed zucchini, garlic, grape tomatoes, artichoke hearts and parm cheese over angel hair. I am going to try adding the shredded provolone to the parm cheese next time. Thanks Hedy!! ❤

Chef John from Food Wishes agrees and insists deep frying the Zucchini rather than pan frying is the first key. The second key is refrigerating the zucchini overnight. The kitchen science is not explained. Finally, Chef John uses more butter. Otherwise , he mashes the zucchini like you do , and he used substitute cheeses like you. I pan fry my zucchini in more oil and butter than you do, but I hate deep frying. I might refrigerate the zucchini once to see if it matters. I love watching you as your accent reminds me to call my sister in New Rochelle( I live in Omaha since Medical School). 😘
