How to Adjust Stair Wall Options

And how do you add a full height wall but leave it open under the stairs? I can fake it with a doorway and tudor arch but it takes a few minutes to line up the angle. I need it a lot putting open spaces under stairs. Laundry rooms, Toilets etc.
