Well there are a lot of reasons for writing down moves, yes they can actually forget where the piece was few moves back and when they calculate, they need to know the whole process whether it's theory or mid-end game. Another reason is to avoid cheating/illegal moves. It is also ( I think ) mandatory to record the moves ( Fide 8.1.1 )

I figure the shaking of the hands afterwards is as far as good sportsmanship goes. So assuming it’s nothing more than talk about the match. Right?
I think it's best to look at chess as two scientists trying to figure out the best way to play the game out. These guys study the games anyway and likely will find it so I doubt it's giving much away.

Its because of the initial position could reveal the king whereas it would be hard to cover it up with the positions of the pieces of the black
