225g fine oatmeal 100g wholemeal flour 100g plain flour (all purpose) 1tsp yeast pinch salt 900 to 1000ml water 1 tbsp baking soda Mix dry ingredients, excluding baking soda. Slowly add the water to produce a batter like pancake batter. Cover and leave for a few hours (some shops leave it for 8 hours). Whisk in the baking soda and check the consistence. Add water if needed. Fry like a pancake.
Never make oatcakes in a high sided frying pan, if you want to make them at home use a flat skillet where your oatcakes don't end up on the floor trying to toss them like pancakes...
They looked pretty good. I was from close to Stoke. Now in Canada. I make my own and they turn out good. Iwas only disappointed by one thing. Instead of the hill billy music should have been talkind Stokie.
