Thank you. This was easy breezy. I didn't know how to joint the body. I don't have a rolling pin. I have an 'old-time' meat scissor that I sharpened along with my butcher knife. One good press of the scissor & the mid-section cut away without any bone shards. I didn't know the belly flaps were edible; I already threw them away. Maybe next time. I'm making rabbit stew in a marjoram cream sauce, for the 1st time. (Gonna saute' the innards in the same kind of sauce). Wish me luck.
Came across this as I was interested to see some other people joint and cook rabbit. My stew is in the oven as I type. I jointed two wild rabbits. I am happy using a cleaver and often do but for anything like this I use an 8" Santoku. It's my go to knife for almost anything. I prepped all the veg and jointed the rabbit with it. I don't know how I lived without it 20 years ago. My chef's knives barely come off the knife bar these days. Rabbit bubbling away in some stout and red wine. Hurry up dinner.
I like rabbit meat, but also always very SAD when I have to joint and cook them by myself. I usually wrap the head with kitchen paper so I don't see it, say "I'M SORRY" and "THANKYOU!" before cutting it off.
You are absolutely right. We do have an UNLIMITED variety of food. Cutlets, belly, ribs, chops, thighs, breasts, shoulders......mmmmmmmmmmm I'm hungry now.

Humans do not have USDA guidelines for preparation, treatment, etc. Rabbits ARE so covered by the USDA. Rabbits are used for meat on practically every continent. I say practically as I have not seem anything about rabbits in Antarctica (although they would be a suitable source of protein requiring little space). None of this applies to humans. So your argument has no basis in reality. If you are against the use of rabbit for meat why are you here? Rabbit is very tasty. More like turkey than chicken -- it's a denser meat than chicken, and extremely lean. Italian recipes typically wrap it in prosciutto, and it's also good with bacon. Or slow-cook, shred the meat and mix with BBQ sauce -- yum yum!
Man, I could never eat rabbit. I ate it once and it wasn't bad exactly it's just that now it reminds me of a pet rabbit I once had. I think the only way I'd eat it is if my parents didn't tell me at all that it was a rabbit because if they did tell me I wouldn't eat it, and if they told me after I'd already eaten I'd get really sad. It's dumb and sort of childish but it's the truth.
I think i ate rabbit once when i was little, but i didn't really like it. I hope i still don't like rabbit because is a bit expensive and hard to prepare for cooking.

i love the the first part.. However your logic is flawed .., plants do not have a central nervous system, therefore they do not feel pain and the are not sentient. Plus, animals have to eat plants in order for you to eat them. It takes about 12 pounds of grain to yeild only one pound of beef... So a lot more plants have to die in order to raise meat

I have a nice rabbit in the freezer which is why I'm watching this. It is different than jointing chickens. I also learned recently from the same farmers that I got this rabbit from that rabbit is lean. They made a braise and the meat was very dry. So I think I will be using a method that takes advantage of lean mean. I will be keeping the bony bits for stock including head if I have it.

I love rabbit cooked with small onions called stifato a Greek dish my daughter loves it too. We were in Greece and we hit a wild hare and we stopped and got it my sis cooked it the next day delicious.
If you're like me, doing this for the first time and your largest/heaviest knife is you favourite sharp one... use your second-best knife. I've just put a kink in mine ;-( But the cheap third-hand 15cm Wiltshire knife without the best edge and striking it up the top by the handle got through the spine first go.

i'm not the one eating meat and then saying "eew yuck, don't slice it in front of me, this is cruel/disgusting" etc. I eat meat and i do realize that this thigh/breast/whatever used to be part of an animal. If people have such issues with facing what their food looked like before ending up in their plate, they should become raw vegan and stop being part of this disgusting process. Otherwise, be a mature adult and accept the fact that your food was once a cute little bunny.
Don't make the mistake of leaving the rabbit too long without paunching (gutting) or, at least, squeezing out the bladder. Failing to do these things will taint the meat, and don't be tempted to 'hang' your bunny because it's game. Use it as soon as possible after shooting. Skin, joint if required and soak the meat in salted water overnight. Rinse before cooking.

If you're like me, doing this for the first time and your largest/heaviest knife is you favourite sharp one... use your second-best knife. I've just put a kink in mine ;-( But the cheap third-hand 15cm Wiltshire knife without the best edge and striking it up the top by the handle got through the spine first go.

If people have such issues with facing what their food looked like before ending up in their plate, they should become raw vegan and stop being part of this disgusting process. Otherwise, be a mature adult and accept the fact that your food was once a cute little bunny.

Don't make the mistake of leaving the rabbit too long without paunching (gutting) or, at least, squeezing out the bladder. Failing to do these things will taint the meat, and don't be tempted to 'hang' your bunny because it's game. Use it as soon as possible after shooting. Skin, joint if required and soak the meat in salted water overnight. Rinse before cooking.
