@@raymondcampbell9500 hey Ray, it's really the whole process. Cooling them down in ice then reheating them is probably that largest contributor to the snap. 👍🏼
Big fan of your channel. Made the hatch green Chile sausage - had good flavor but not much heat. Just made this recipe (smoking tomorrow after refrigerating overnight), but the patty i fried up had really nice heat. I’d say you nailed this one. Thanks for sharing.
Some people are just made to be teachers and you are one of them. Excellent video, so well made, easy instructions and you give the watchers the feeling that you know what you are doing. The end result is a beautiful sausage and we have to take your word that it is good and you make us feel that it is definitely delicious. Wow what a great video. I have mentioned before that you have taught me a lot watching your videos and you did it again today. I love Habanero and being from Louisiana I love sausage which we use to season our food along with Tasso and Andouille, I will definitely try this recipe. Thanks again Joe, excellent video.
Another truely awesome video Joe...i really like that you informed us that it was a fresh sausage...thats right up my alley as i dont have a smoker...thanks again
Made this today to sell in the store I work in, it rocks! All Joe's stuff I've made tastes awsome, he really knows what hes doing and explains the process well.
Hey Joe, thanks again for talking to me about your Al Pastor recipe. I’ll be smoking two pork loins tomorrow with this rub. Keep rollin that smoke Joe, huge fan!
Really enjoyed your detailed explanation last Wednesday of the measurements of ingredients, loved watching the recipe come together for the final product. Great job Joe!
Joe, between you and Bradley from Chuds, I’ve stepped up my sausage game so much it’s incredible. I usually stick to venison/pork sausage until I run out of venison so I adjust the mixture for that but these mixtures are spectacular! Thank you! Thank you! Thank you!
Wow, the habanero sausage looked so good! I'm sure it had a fair amount of heat with that many peppers mixed in! The links looked like perfection on that old grill!! I wish I could have tried a bite! Amazing work, Joe!! 🌶👍
Love your channel Joe! Just bought a book on how to make sausage and have started watching a lot of your sausage videos as well as Chuds bbq and just subscribed to the other guy you recommended in this video. Thanks for the great content!
Man, those Habanero sausages came out looking KILLER! It was enjoyable assisting in creating the recipe for them. One of these days, I've got to try my hand at making sausages Great video.
OMG this looks so good! However, considering the fact that my spicy tolerance has gotten so high that ghost peppers barely affect me, two (or even three) percent habanero just won't cut it for me; I'd have to do a bare minimum of five percent. Ooh! I mentioned ghost peppers; you REALLY need to do a ghost pepper sausage! The natural underlying smoky flavor of ghost peppers would be PERFECT in sausages! Your wife and daughter probably won't eat them since they don't like spicy stuff, but that sounds beyond amazing! I've watched a few of your sausage making videos and enjoyed them all, but this one especially earned my subscription. Great content, dude!
Great cook again Joe. Sausages looked delicious! Also love the retro 60's Weber kettle, the more I see you use it, the more I agree it's the right decision that you just replaced the broken parts and kept its character!
The live stream was a ton of fun. Hope you do more of them. I will be making this recipe, but instead of making links I'm doing one pound portions and freezing. Using as breakfast sausage patties, in pasta, etc...
that was probably the most productive bbq chat I ever witnessed lol and this was super cool watching you give that recipe some life. Thank you for setting that up and sharing. Excellent job Joe and good to hear the habanero wasn't too overpowering with the heat level. Time to bust out the flour tortillas and make a sausage soft taco!
Those sausages are fire!!🔥🔥🔥 look and sound so darn good👍 you're definitely the sausage king!! Thanks for sharing brother Joe! Have yourself a great one, you all stay safe!!👍🍻👊🍺🤘
I'll take a Habanero over Jalapeno any time. It was fun watching the live, the oregano looks about right. Cool to see you using blue to cook the sausages.
Thank You so much for this superb video. It's REALLY difficult to find decent Habanero Sausages here in the UK; Which means that I tend to make them and I am definitely going to give your recipe a go. Peace, Love'n'BBQ.
Hey Joe! Thanks for making such descriptive vids. I really enjoy them. One thing i have t seen is making venison or beef stix smokies. Ive got about 30lbs of venison that i want to convert into stix. Do you have a video showing that? I know you use different casing vs the hog casing. I would like to see a recipe that you would so do those. Just a suggestion. Thanks again Joe!
Bro. Great recipe. The brats were freaking killer. Just made some. I also added some smoked Smoked paprika, crushed red pepper, cayenne and a little bit of cumin. Damn it was money. Thanks
Mr Joe….. I know my limitations….I didn’t watch this video during my break because I knew my taste buds would be flowing like a river………just finished some sausage from a local butcher.Thank you !!!!!!
good job Smokin Joe I love me some habanero's. I want to make me some sausages, but I have to get my nerve's up to try it. I need the right seasoning amount to put in it. Still trying to figure that out, so I'll keep looking at all your video and the amount you put in yours.
Love the video. They look great. Witford you. Can I just freeze what I don’t cook. If so how long will they keep. Sorry for the simple question. I’m a rookie.
How could we adjust this to accommodate for kosher diet (no pork). We have a lot of venison in our freezer from last hunting season. Do you have videos for game sausages??
Venison is a great choice for sausage making....but...you have to add fat to the mince to give you a 70% lean meat to 30% fat ratio...since you're aiming for a Kosher acceptable end product, you'd have to use beef fat...best of luck in your venture...
Wonderful video. question for you . For those of us that dont have the quantity of Brisket trim around. Would I just sacrifice a brisket for this purpose? Same question for another Receipe using pork fat, Woulld using a pork belly work ? I have noticed your dont use your mixer that much??? Thanks you for sharing cant wait to try this one as well. Gloves ordered
I've always been looking for more fruit sausages and have been playing with chicken/apple sausage. I got to thinking that I use apple with pork all the time, so what about a apple pork base sausage. Would love to see what you could do with this. I'll keep tinkering and see what I come up with too.
Thanks for watching my homemade Habanero Sausage video. If you're a fan of cooking on the Weber Kettle, check out this Weber Kettle brisket video next.

Love your vids. What is a good substitute for the powdered milk for people who can't/don't drink dairy?
Joe sometimes you mention the grind 4.5mm etc. Most of the time it looks like 1/8 grind? Other then knowing the grind your videos are perfect!
1/8 is smaller than what I'm using but it will work too. The dies I'm using are stamped in mm and it is a 4.5mm that I use. Thanks for watching 👍
good job Smokin Joe I love me some habanero's. I want to make me some sausages, but I have to get my nerve's up to try it. I need the right seasoning amount to put in it. Still trying to figure that out, so I'll keep looking at all your video and the amount you put in yours.
Sweet Sapper Baby Jesus. I need this in my life.
Those look killer! I thought the cajun jalapeno cheddar sausage had some heat to it lol.
Love the video. They look great. Witford you. Can I just freeze what I don’t cook. If so how long will they keep. Sorry for the simple question. I’m a rookie.

R.I.P. the lamb sausage, but this was definitely better : )

Do you only use curing salt when you smoke the sausage? If your packaging it raw or going straight to the grill, do you skip the curing salt?
Joe can I ask what size that sheet pan is your using? Thanks!!
26x18
Love you 🥰 😋
Saluditos 🤤🤤🤤
I've asked numerous channels about making a Jamaican Jerk chicken sausage and nobody has done it yet.
Oh man, I bet that's delicious
See Chuds BBQ here on TH-cam....he has a Jamaican jerk recipe....
Habanero may be hotter but tastes so much better.
