Slightli Chefi Chicken Soup

Chicken soup:
It's January and it's cold, and therefore, it's soup weather. Chicken and vegetable soup is a standard in my house and, if I am honest, this is the type of recipe where I think an actual "recipe" isn't a good thing. You can have a base idea for sure, but you really should use what you have for dishes like this, dicing up those root veggies and wrinkly carrots that you're not quite sure what to do with. Maybe instead of frozen peas you have frozen edamame. Maybe you're starting with half a grocery store barbecue chicken instead of 4 leg/thigh pieces like I used. Maybe you have a quarter of a cabbage head...chop it up and throw it in!
You really can't mess this up. It's about warmth, comfort, and affordable nutrition.
