Rest, Fire and Fried Breakfast: 17 day solo canoe trip, August 2013, Part 4

  • Found a great campsite, and on Day 5, I decide to take a day off (rest day!). I explain my fire rock setup preference for a C-shape, which I find is optimum for cooking performance, discussing air draw, flame pattern and the "chimney rock" effect. I show my new favourite "fully fried fatty breakfast" of OvaEasy eggs, and my own recipe for "power-packed pancakes". Fish (walleye) for dinner. And its time to do some laundry as well.

    OvaEasy Eggs: I have trip tested these for 2 years now, and they come out perfect every time. They are freeze dried, not dehydrated, and taste like real eggs. www.nutriom.com...
    Mix with water. I fry in lots of olive oil, sprinkle with Club House "Tex-Mex" seasoning. When done, I cut up the eggs with the spatula to absorb all the remaining oil.
    My Power-packed pancake ingredients that I premix at home:
    3 parts bannock mix (my own recipe)
    2 parts 1-minute oatmeal
    1.5 parts Bran Buds cereal (for fiber)
    1 part raw hemp hearts (for vitamins and minerals)
    Just add water.
    My bannock mix is whole wheat flour, baking powder, powdered eggs, and a generous amount of lard shortening, (about 1 cup per 6 cups flour). I cut the lard into the flour and mix with a shortening cutter/mixer so that its all dry and integrated into the mix. Lard keeps very well unrefrigerated.
    The power-packed pancakes are fried in a generous amount of olive oil, and when done, the pancake is cut up with the spatula at the end to absorb all remaining oil. Lots of good fat for fueling my furnace for the morning!
    Ya I know, no bacon! I love bacon, but don't bring bacon in summer due to storage issues, and so as NOT to attract bears, which are attracted by bacon smell.
