Followed this recipe last weekend. Didn't add the pasta and I served on a sweet potato mash and home made garlic bread as a side.. absolutely beautiful
I would prefer to leave out the pasta and have the potjie with traditional pap or dumplings. Love the recipe though and can't wait to try it. It looks so yummy. One could probably add a little red wine to it I suppose.👌🇿🇦😋

I have been using a Potjie ( No3 )for many many years it is my goto cast iron for soups and stews. I kick around a lot of campgrounds in Australia and never see them being used and I don't why. Thank you for your video and the recipe looks just great.
In outback Australia is normal to use the iron pot when camping making even bread and a lot of sensational meals like magpie geese curry mind boggling meal thanks for sharing such beautiful memories

Ok, I got a great Present. A no. 3 Potjie pot. So yesterday I used it yesterday. Fried onions, 1 5kg beef, baby potatoes, carrots patty pans, baby marrow and cabbage. It was to lekker 4 my family and I. BUT!!!!!! It never fitted in my fridge. So this morning 4 breaky we lifted the lid and it was bubbling, it smelt great, not sour. I thought the cabbage made it bubble. Obviously it's not good to eat. Right??

It's an old ABCO vacuum coffee pot. My mom bought it at a second-hand store, not knowing what it is exactly. Until a few years ago I googled the name and saw how to use it. Much older than what I am and still works great every time. Thanks for watching.

Hi. I used a ABCO vacuum coffee pot. It works in combination with the top and bottom pot. This pot is definitely older than a few years, and still works perfectly.
@@WolkbergArtisans2019 Thanks for answering! I usual drink coffee from a normal Coffee Machine but that Italian Style Moka Pot creates Coffee that has a total different distinct taste. The only downside is it doesn't filter it good enough, and you end up with a pretty thick sludge in the bottom. That's why I am looking around for other ways to make Coffee. I think I have to give that ABCO vacuum coffee pot a go, if I can get a hold on one!
Using gas, or in your case, coal comes close to sacrilege... Wood fire is the preferable way to go. With the lid put on slightly skew, it allows some of that smokey flavour into the potjie...

Hi Alvin. I personally think there are to many rules and stigma regarding cooking. Too many do's and don'ts. If you stir your potjie and you enjoy it like that, it's perfect. If you layer your potjie and never stir and you enjoy it like that, it's also perfect. Cook it any way YOU like it. Thanks for watching.
No red wine. No spicing the meat while browning. No frying onions. Pot not sitting even. Too much liquid initially. Adding more water with no stock. Pot is boiling. Should be simmering (can see the meat is kind of tough at the end). Whole carrots not chopped. No potatoes. No rice or pap. And PASTA!!! Damn bru. You really did a weird one here😂 but hey you know each potjie to each man is his own creation. I definitely would have had a good taste of that though

once u start stir is no more called potjiekos. its stew.. . u don't steer potjiekos at all.. meat at the bottom. then layers of vegetable. the only thing u stir is meat with spices .coz the steam must cook all layers of vegetables.
thats not a potjie,its stir fry,you dont stir a potjie and you dont add pasta,rice or pap with it,you make it separate,and pack your ingredients in layers,mushrooms last!

Thank you! The Worcestershire sauce adds some salt to the dish. The beef stock added to the potjie has enough salt to add flavor to the dish.
Here in Australia one does not always find oxtail or lamb shanks etc.

I totally agree with the lid slightly skew to add smokey flavour to the potjie. I use wood or Charcoal- just depends what is available at the time.

Try it in a clay pot. There is no right or wrong way in cooking, only something different. Thanks for watching!
