The Best Squash Casserole, made by Stephanie

- This squash casserole is the easiest, simplest, most delicious squash casserole ever. This is a must try. As Stephanie says in the video, "it's easy enough for a weeknight meal". It only takes minutes to put together, a few ingredients, and only minutes to bake. I hope you will try this and if you do, please let us know what you think. Recipe below.

This recipe can easily be doubled for a 9X13 casserole dish.
Ingredients:
3 large squash, about 2 lbs, cut up
1 small onion, roughly chopped
2 Tbsp butter
1/2 can cream of chicken soup
1/4 cup sour cream
1 cup cheddar cheese, grated
salt & pepper to taste
1/2 tsp garlic powder
1/2 tsp thyme
Topping:
1 sleeve butter crackers, such as Ritz, broken into small pieces
3 Tbsp melted butter
1/4 tsp thyme
Directions:
Preheat oven to 400 degrees.
Cut up squash and onions. Add to a pan with 2 Tbsp butter. Sautee until tender. Remove from heat and transfer to a large bowl. Stir in soup, sour cream, cheese, garlic powder, thyme, and salt and pepper.
Add to a greased 8X8 casserole dish.
Crush butter crackers and sprinkle on top of casserole. Add thyme to 3 Tbsp melted butter and pour over crackers.
Bake 10-15 minutes until golden on top.

I Love squash casserole. I make it about once a month and eat left overs I can eat for days since my husband died it's only myself. Only thing different I do is add a beaten egg and half cup mayo and I use cream of celery instead of cream of chicken.
The Ritz crackers takes it over the top.

Granny made something similar to this except she crumbled bacon on top then the crushed crackers . So so good !!! With summer coming we all need ideas for squash and zucchini!!!! 😂 Those things produce like crazy !!!! I love it though . Always plant both . 😁 Thank you for sharing ! God bless !

I recently discovered Campbell’s Cream of onion!! Oh my!! I thought it was only available on the eastern half of the US bit was so delighted to find it in my Southern California grocery store. I am going to try it with this recipe. I don’t like the chicken pieces found in a can.
