Recipe sounds delicious! Although I do have a concern about eating raw egg yolks. I'm sure it's safe as you are a very seasoned and experienced chef. By the way, I love the tweaks you have done to your visuals. Looking forward to a lot more tasty recipes.

Thanks so much, Chris! Rest assured, adding the yolk is absolutely safe. I was surprised to learn that this “trick” to rich creamy mashed potatoes has been around for over 100 years. (It’s quite fun trying some of the old recipes…I should do more of that!) Also, the yolk isn’t actually raw by the time you whip it into your hot potatoes. Notice that I add them while the mixer is running. If you don’t, they can start to cook so fast that you’ll end up with itsy bitsy pieces of scrambled eggs in your potatoes. 🙄 I hope you’ll give it a try and see how rich, creamy and smooth your potatoes will be…you’ll wish you knew this trick a long time ago. 😉 Enjoy! - Deb

@@DebsKitchen I thought the hot potatoes might cook the yolks but I'm certainly no cook so I wanted to check with you. As I mentioned, Parker is a HUGE mashed potato fan (just like Allyson) so I'm definitely trying out your recipe 👍

Quick question, when do we turn the heat off?

Hi MJ! I turn my heat off when my “test mash” indicates that my potatoes are done. Then I drain them, return them to the pot and go back to either the warm stove (as we did in this video) or to my countertop to finish up the whipping and adding of the rest of the ingredients. Be sure you have your beaters going when you add the yolks so that they blend in smoothly and make your potatoes rich and ultra creamy. Enjoy!! - Deb
