So I called my abuela and asked for her help with making a dish, I new she had many recipes from my bisabuela, she said of course she would help me. So I signed up to bring a dish in, I wasn't sure what the dish was gonna be yet, I was going to spend the weekend with my abuela to pick the right dish. We eventually settled on nopales. I worked very hard to get the pronunciation on several words right. When it came time to bring it in, I had gotten permission to re worm it in one of the schools cooking classes ovens, when it came time to present the dish, I got even more extra credit because I had brought in photos of my bisabuela preparing the cati, making the nopales, I had even rewritten the recipe that my bisabuela had written herself, the original was old and loved that I didn't dare bring it to school. When I announced the name of the dish, my teacher was like wait really, are you serious, I said yes mam, she said she hadn't been aware you could buy cati, and so it had been years since she had nopales.

I am an Indian and for a long time in my life I used to believe mexican cuisine equals to cactus. This was way before I even knew that pasta and pizza was from Italy. Nopales used to be like some food of my dream the first continental cuisine I wanted to try.
