Yes, those 4 clamp bolts are tight with 26Nm of torque, if you don't have a torque wrench, use light force to tighten them and in that case I'll also use a small amount of a blue loctite on threads. There is nothing to worry about, it's a very easy and simple upgrade.
To be honest I didn't see that quad lock product, so I can't speak about it. Quad lock is a good and quality company and products, the only difference is that there products are designed for universal fitting with many different bikes, where Evotech/ Quad lock is specified crafted for Street Triple and can only be fitted into one position on the handlebar clamp. For many years I've been using different Evotech products and if Evotech said that the product will fit your bike it will fit it like a glove, and the fit and finish is always perfect. Like I've mentioned, I wanted to have a phone in the central position that's why I went for the Evotech solution, because I couldn't find anything similar from Quad lock.
When the phone is in the horizontal position there is no issues with the ignition or key, but when the phone is in the vertical position it's on the way and blocks the access to the key. So then you will have to turn it to the horizontal position or remove it from the holder to have access. But with this mount the phone is exactly in the central position without any bends, and it's very easy to look at it while riding without being your head. I'm very happy with it.
I don't have a tank bag, but I don't think there will be any issue with it, the mount is fully adjustable, so it's very easy to find the position you like.
The top of the mount which you click into the phone is a quad lock part, the holding bracket is made by Evotech, and in my opinion it's better because on the Street Triple you can screw it into the center of the handlebar clamp, so the phone is always in the central position. Different bikes have different central clamps, so sometimes you have a gap when you can use the whole mount from your quad lock, but not in the case with Street Triple or Speed Triple.

This particular tool case is from "Neo Tools", but so many different brands offer exactly the same or similar tool cases.
