if you grate all your summer squash this way, salt it and drain it, then it can be frozen a cup at a time. Once thawed the grated squash can be used for so many recipes, savory and sweet. Best method for preserving squash I have ever found. And to make it even easier, I put the salted squash onto a clean dry dish cloth and squeeze the liquid from it that way. So much quicker and easier.

Any flour should work. I think you need it to help thicken. Although, coconut flour acts different than others... it's a ton more absorbent. You may need more other flours. I don't know You'd have to experiment.

Thanks, I just saw someone use a nutmilk bag to squeeze out extra water, I'm going to try that too.
Cheesecloth will be what I use to squeeze. Thank you for the grated squash/freeze tip.
