You can get your 4-Star Bidoof on that little path on the water. One will pop up from the Dam if you hit the Dam with fruit. That'll get you a 4-Star picture.
You can get a 4 star with heracross in the night area if you get heracross to come down by doing the request associated with it. It won’t do anything at first but later it will fight with pincer and will give you a diamond 4 star
There was the complex interaction with the Magikarp in the Valley level where we had to knock it to the Mankey who kicked it over the mountain, and then later hit it into the waterfall to have it evolve into Gyarados.

4 star Grookey at night. Hit pichu at the start and when you see only Grookey sleeping wake him up. Then at the flower area hit the Crystalblooms on the right and he will jump on a rock and start banging on it like drums. I got 4.8K out of that interaction.
My diamond 4 star Grookie is at the end of Park Day, he isn't doing a hand stand, he's either yawning or eating something. I'm not sure. You can get surprisingly a lot of 4 stars all in that flower area.
You can get a 4 star emolga by lighting the flower next to the heracross, there's an emolga that lands on the wall just above it, will give you a 4 star shot too

Talking about the second one, the jungle, the Morelull seen at night, near the end when passing by the cave just before you exit, I threw a fluff fruit at them by accident, I wanted to get it into the cave to see if the Yanmega inside would react, I hit a Morelull with it & it toppled over, its friend checked to see if it was alright & I got pictures of it. It was a 3 star photo & the game captioned it "sleeping buddies" like uhh, I'm sure that thing has a concussion if I didn't kill it so sure, sleeping buddies it is.
Tearing my hair out trying to get that magikarp shot, I’ve captured it like 4 times but my timing must be slightly off because it doesn’t recognise it as completing the request!
The shutter multi shot effect helped me a ton when I went back through to get higher point photos of it. I just zoomed to that part over and over. It is frustrating cause it’ll think it’s Pigdeot most of the time
A few more interactions I've been able to get are. *Grookey to dance on top of the sign at the start by playing music *This will also cause the Bouffalant to start headbutting each other behind the sign *The Tailow on the sign near the end will dance and then fly in a few circles before landing again if you play music near it *The Florges near the end will do some kind of whirlwind move if you throw an illumina orb at it and all the Comfey will dance around. It's a great 4* shot *There's a Pichu near the end with a crown of flowers hiding in the flowerbed
I haven't tried it myself but try to knock down the heracross and then try to get the pinsir out of the ground with scans or maybe the hit the lumina flower next to the pile to see if that gets it out.
At the Florio Park at Night, you scan the pile next to the Illuma flower until the Pinsir pops up, then keep scanning until the Heracross falls down from the tree next to it. They'll look at each other like '...wassup?'. Later, at the bend by the Bidoof dam, you can see the Pinsir and Heracross fighting. BUT... If you wake up the Sylveon that's sleeping by the Torterra (there will be a Pichu and Grookey there too) just before that bend, play music when you get to the 'fight' and Sylveon will come out and quell the fighting, so the trio will be all smiles. ^_^ Pro Tip: Zoom in so your pod will slow down a bit giving you more time!

You can more easily get the rare photos of Heracross at night when it fights Pinsir, but you gotta make it leave the earlier spot, the fight is actually really cool to watch. I won’t say who wins though.
If Mirror doesnt like my photo (that I feel is better than the original & this happens way too often, tbh) I'll put the photo in my album lol. What does Mirror know about good photos anyway? Out of all my awesome photos, his favorite is a photo of Clamperl swimming. Lame ass Mirror.
when you knock heracross off the tree it flies to a different spot, if you hit it with a lumuna orb itll appear later in the stage and start FLEXING
easier 4 star Emolga: hit the very first Crystabloom, and Emolga will land on the ledge behind it, glowing. That's a free 4-star picture.

You can also feed the pidgeot apples every time it lands for it to come close and smile at you at the end and that counts as a 4 star.
you have to do that at night though; it's part of a task.

Thankfully you can edit photos that you want to keep, so if it’s not quite perfect you can tweak it just right.

If you're talking about the Flopping by the Water request you actually need to capture the Magikarp being carried away and not the Pidgeot.
