In the Adirondack's(upstate New York not yuppie country) I've heard Sac-a-Lait called crappie or strawberry bass. I've haven't scene filets like that since I was a kid in my area. Nothing better then finding a down tree under the water or brush pile and jig fishing for them Sac-a-Lait!!!

Up here in North LA, sac-a-lait are called white perch or crappie. White flaky meat...mmm, mmm! I like all fish and often say my favorite is whatever is on the plat in front of me. Sac-a-lait, bream with that sweet yellow meat, catfish, bass! Just call me when they're ready!
I lived in New Orleans in the late 80s and used to fish all the time. Asked a guy what he was catching and he said Sacalait, I was like what, lemme see and he pulls up a nice stringer of white crappie. I was like hmmm my first introduction to cajun french.
