I think that all of the excellent musicians that we love have some concept of music theory, whether it's Western Music Theory, or their own idiosyncratic theory. it's hard to imagine how a person so interested in music and its practice would fail to develop some kind of theory of music.
Ya !! they all definitely have some way of organizing something somehow , they just might not have any words for it, and may not even be able to explain it but having transcribed so many self-taught players, i see the repetition in their playing, whether it be patterns , phrases or concepts!
