Another great video with an intriguing recipe I certainly want to try, but here's a thought: rather than straining the barely and lemons from the bucket, why don't you simply pour the grain and fruit from the kettle into a straining bag which is stretched across the fermenting bucket. You then tie up the bag and weigh it down so that it remains submerged in the wine. When it comes time to remove the barley and fruit, you simply hoist the bag, allow it to drip into the fermenter for a few minutes and then remove the bag. You can then easily siphon (rack) the wine into the carboy or demijohn, and so limit the amount of oxygen you introduce after about 5 days of fermentation.
Thinking some more about this potato -barley wine. You selected pearl barley, but I wonder what this wine might taste like if instead you had selected malted barley but had used the same technique to extract the flavors from the barley.
A auto syphon is a cheap and easy way to rack the drink without introducing oxygen from the pour rack method. The rest of the recipe sounds like it would be a nice experiment.

What is the yeast you use for this?
This yeast is a high alcohol wine yeast by a company called CrossmyLoof. They produce great yeasts
