Nurses is a mixed bag, alot of them are sleeping with doctors and the orderly staff, then you have good nurses that are constantly working some of them have 24 hour shifts, the high stress affects their behavior, its like a police office but at the hospital you have to deal with people dying and suffering, its not something you really want to be around, plus they can get contamined by some contagion and bring it home

Central Thai people are considered the standardized group. Anyone beyond that you can say they are not Thai by their perspective. The Isan region is pretty much overpopulated by Lao descent people. They are not indigenous of this region and most of them are lazy.

It's simply a stereotype and stereotypes exist for a reason. Nearly all the freelancers I have met are from Isan. When you add other aspects, e.g. the way she dresses and how forward she is, it doesn't take a genius to figure it out.

What I've found is that relationships are just more transactional overall in Asia, and typically relationships among Chinese men and women are even more transactional than between Chinese women and western men. I imagine when you hold socio-economic status (higher levels of transactionality at very low and very high levels of socio-economic status, less so in middle class culture) constant, the same is likely true in Thailand, but I have less first-hand experience and have only had one Thai girlfriend.
This presents a problem; sometimes, as you point out, Thai women feign caring for a foreign man strictly to extract money. But other times their requests for financial support are actually entirely appropriate within their own cultural context and isn't indicative of malintent or deception. It's very difficult for newbies and tourists to really differentiate between the two, so giving the blanket advice of "assume she's scamming you" can be conditionally helpful, but obscures a lot of the nuance in cultural and economic differences between the west and the east. In China things are even more in overdrive with regard to relationships being more transactional; it is very normal for a man to go into 6 figures USD of debt with a ~30k or less salary to afford the house, car, and dowry requisite for a marriage. While this triggers our alarm bells for relational instability and a lack of authenticity on the woman's part as westerners, it's considered entirely normal among Chinese men and women. Fundamentally, marriage and dating have been more transactional and pragmatic in these countries due to the fact that they're 30-50 years or more behind the west economically and have moral frameworks originating from Confucianism and Buddhism rather than Occidental Judeo-Christianity. The amount of money even the coldest scamming Thai bar girls ask for is a tiny fraction of a what a normal chaste 24-30 year old Chinese woman asks for.
Just speaking probabilistically, I'd say some non-trivial portion of the men in your stories weren't being scammed at all, but rather just not adapted to the cultural context of dating and marriage. In the end, the things that predict relational stability are still the same as in a western country: Assortativity in physical attractiveness, socioeconomic status, educational attainment, habits, and values. To put it more specifically, a 48 year old 3/10 guy's relationship with a 8/10 26 year old Thai bar girl fails and channels like your say "well yeah it was because she was a bar girl and bar girls are scammers!" But it would be more accurate to say "the relationship failed because he's a 48 year old unattractive guy with a master's degree and she's a physically attractive much younger peasant with an 8th grade education who can't find the UK on a map". If he'd met the exact same girl who worked in a hotel lobby and had 0 entertainment industry experience, the probability of the relationship failing is still going to be overwhelming, though admittedly lower. Similarly, even if the girl has a past or present in the industry, if she's paired with a foreign man of similar age, physical attractiveness, values, habits, etc, their relationship isn't doomed simply because she used to be a FL on TF or worked in a soapy for 3 years or what have you. Proximity is also a huge issue just like it would be in a western country; if we're dealing with a Thai woman and an expat settled down in Thailand, its much more likely to succeed than a Thai woman and a tourist who's barely in Thailand more than a few weeks every year.
After all that said, I've made the decision to stay single and just enjoy myself anyway LOL. But just saying "they're all in it for the money!" I think is a gross oversimplification and there are probably some people who would find a lot of happiness in a long term relationship or marriage with a Thai woman, even if I am likely not one of them.
