I disagree you could tell from the beginning that she was uncomfortable with this whole thing and throughout the whole thing she was a good sport but they are just friends. It was obvious Zach likes her though

Also Kieth said wouldn't mind, not would you like to go out on a date again to which I guess almost anyone would show the heart to especially if the date went like the way it did in the video. She could have been reluctant because she didn't want to hurt his feelings but showed blue to reaffirm what she wants out of the relationship, not that she was afraid of her real feelings. If I didn't have those kind of feelings for a friend I would have picked blue even with the vaguely worded question because I'd worry he might read into it to much if I picked red and been pushy. Not to say your theory is wrong, just that it isn't the only possibility.
