  • Here is a recipe for Moong Dal Kachori
    Ingredients for the stuffing:
    - 2 cup of moong dal.
    - Water for soaking.
    - 1 bowl vegetable oil .
    - 1/2 teaspoon of crushed fennel.
    - 1 teaspoon of cumin.
    - A pinch of hing.
    - 1/4 teaspoon of turmeric.
    - 1 teaspoon of chili.
    - 1 teaspoon of coriander powder.
    - 1 teaspoon of green coriander .
    - 1 teaspoon of aamchur.
    - Teaspoon of crushed dry coriander.
    - 1/2 teaspoon of salt.
    - 2 teaspoons of besan.
    Ingredients for the kachori:
    - 1bowl maida .
    - 1/2 teaspoon of salt.
    - 2 teaspoon semolina .
    -1bowl wheat flour .
    - Water for kneading.
    Instructions:
    1. Soak the moong dal for two hours. Then, drain the water and pulse until it becomes a coarse paste.
    2. Heat the vegetable oil in a kadhai and add the fennel, cumin, and hing. Sauté over low heat until the mixture is aromatic.
    3. Add the turmeric, chili, coriander powder, aamchur, and salt. Continue to sauté until the mixture is aromatic.
    4. Add the besan and roast it until it is aromatic. Then, add the moong dal and cook for five minutes, until everything is well-combined.
    5. Set the stuffing aside to cool.
    6. In a large bowl, combine the maida , wheat flour and semolina with salt. Add the vegitable oil and mix until the flour is moist.
    7. Knead the dough, adding water as necessary, until it becomes smooth.
    8. rest the dough for 5-10 minutes.
    9. Knead the dough again, and form it into small balls. Flatten the balls into disks.
    10. Place the moong dal stuffing in the center of each disk. Fold the dough over the filling to form a ball, and flatten it again into a disk.
    11. Fry the kachori in hot oil over low heat, until they are golden brown and crispy.
    12. Drain the excess oil and serve the kachori with green chutney.
