Like some Jaegers actually have two official weights (and Mega-Kaiju has two), and how tiny Mark-I Jaegers are supposedly heavier than Slattern (~7450, 7890, and 7775 tons vs. 6750). I wouldn't pay much attention to them if they're this inconsistent.

Hell, it's not just Slattern: Horizon Brave is literally heavier than the Mega-Kaiju. Horizon Brave would barely come up to the Mega's head.

The reason the tiny mark 1 Jaegers as you say are so much heavier than the kaiju is that they are made out of metal.
