But the two restaurants that I would recommend that are easy to book would be Chiba Takaoka (this is his last year in Tokyo I heard) as well as Inomata in Saitama. Happy eating!
I didn't like uni the first couple of times that I tried it. I think the uni must have been bad in those cases because I fell in love with uni after having it in Hawaii in 2009. I've been hooked ever since.
That's the beauty of uni, that you must eat it right when it's fresh, or else it's lost to time forever.... it's like a magical food. I guess all food works this way but Uni is truly only beautiful for a moment in time.

if you can't afford this type of meal, the owners in japanese shops often dont' have patience it. So they will just reject your business as they are not in need of more customers, they are already busy for the next year and booked out. This isn't that kind of spot.
I love uni. My favorite. What I'd give to have a giant bowl of uni.

Definitely Sushi Suzuki, Sushi Yoneyama, and Sushi Satake. They're all around $200
